Notes: Add 1 tbsp flour to the boil for added starch for the bacteria to eat during the extended aging.
Primary fermentation in 6.5 gallon bucket, with both clean ale yeast and sour mix added at the same time, then rack (in about a month?) to 5 gallon BB carboy for extended aging. Add French, medium-toast oak cubes (boil in water 10 min first). Add dregs from other lambics to increase complexity.
In the 2018 Dixie Cup competition, the Fruited version of this Lambic (aged on blackberries, raspberries, and blueberries) won gold and the Straight Lambic won silver in the European Sour category.

| Notes: This is a historical beer that I pieced the recipe together from various articles about the style. I got to say this is very tasty. Its like a light beer with a smoky character to it, but not too smoky. I even smoked the 1# of wheat malt with oak chips on lowest heat in the BBQ and its still not too smoky. So far everyone loves it. |

Notes: Attempting to create a juicy pale thus the flaked wheat to give the hops something to attach to. Mostly late addition hops to accentuate fruity esters with a light hop bitterness. Low alcohol to create a summer lawnmower beer.
Long primary fermentation (no secondary transfer) in bucket then transfer to keg. Diacetyl rest for 2 days after FG reached, Use beer thief to get sample.
HOP NOTES: Add .5 oz each of citra, amarillo, and mosaic at flameout and at 20 min. for a 40 minute whirlpool.
Another 1 oz bag of Mosaic will be added on approx. day 4 of fermentation (FG 1.021-1.025) - no sock so hops have better contact with beer during fermentation.
Centennial 1oz. will be put in sock in keg to dry-hop |

Steep grains for 60 minutes, starting temp 162 F. Bring H2O to boil and add 1.25 lbs DME pilsen. Return to boil. Add 0.85 oz Cascade and 0.15 oz Summitt. Boil 30 minutes. Add wort from grains, return to biol, add 0.21 oz Summitt. Boil 15 minutes. Add 0.5 lbs DME extra light, add 8 oz cane sugar, add Irish Moss. Boil 15 minutes. Chill in ice water bath and pitch re-hydrated yeast.
SG = 1073.
Add 0.84 oz Cascade pellets on 10/1/18.
Tasting note: Good head retention, nice black color. Lacking in hop aroma, but has a bitter hop bite. |

Notes: This is an all grain brekfast stout recipe converted to extract by me. I live in grand rapids and I can buy breakfast stout year round, I love it. The way I actually made it was by steeping 2 oz. kona beans and .5 oz williamette after flameout for 20 min. the coffe flavor is much stronger than the real stuff but I like it. And I accidentally used kona in primary and I could not find sumatra coffe for secondary so I used java beans. one thing i dislike about breakfast stout is that it is sweeter than i prefer. This recipe i did not think was sweet, closer to son of a baptist coffe stout with cacao nibs swetness and flavor, which is great. If you notice i put oats in the grain description, what I did was a mini mash. Combine all grains and mash at 156F with 1 lb of the LME for 45 min in 6qt water. sparge with 6 qt water at 168F. The lme is necessary in the mini mash for the oats to give the proper profile to the beer, I did this in a pot on an electric stove, make sure to turn the grain sock over every 5 or 10 min to avoid scorching the bottom of it. (mine slightly scorched and it was still good/ not noticeable)primary 4 weeks and secondary with beans 1 week. If you do it with 20 min bean steep after flameout you will have a beer that is not like breakfast stout, instead much more coffee profile, the original recipe can be found here: http://www.beersmith.com/forum/index.php?topic=12090.0

one more thing: add 4 lb malt after the minimash is done, bring the wort to a boil remove from heat and add lme while pot is removed from heat. dissolve completely and return to boil then add first hop addition. add 5 lb lme to wort for 10 min the same way
Btw this is my first ever brew, about 30 hours of research went into education before i decided I had enough education to brew anything. Also the best advice I got for beer turnout is this: ( curtousy of (nosybear)
these are the main factors to its flavor:

2. Temperature control during fermentation
3. Yeast health, including how much you pitch
