Notes: This was a weird one. Just wanted to see how much sugar I could extract from oats. I used basic rolled oats from the store--only plugged in the New Zealand oats because that's about the PPG I was able to achieve from this mash.
The Ceremix Flex is pretty amazing stuff. It allows you to do low-temp cereal mashes without a decoction step. It would have been better with a more temperature-stable glucoamylase because the sweet spot for Ceremix is around 144F (62C). Amigase Mega L for a glucoamylase would be ideal because it can handle above 140F (60C) temps.
Didn't get a stuck mash or anything, but the oats sucked up a ton of mash water. Mashed in with 6.25gal, but only had a pre-boil volume of 4.5gal. Although with 20lbs of grain I guess that's pretty good.
I added all the LME in order to get the preboil grav to 1.073. Would really love to figure this out without resorting to the LME. Next time I'll try a decoction mash with a slightly different liquefaction enzyme.
Racked to secondary after 2 weeks. Aged on oak (WineStix Light Toast American Oak) for one week. Another 3 weeks in secondary, then cold crashed and bottled. |

Notes: The sharpness of the Citra and Centennial hops work off of the bright characters of the Rye grains. Adding in the chocolate and black prinz help's round out the mid/back mouthfeel while adding that bitterness from the grains to shadow the hop bitterness.
You can dry hop this with Citra Cryo hops (1oz per carboy) for 5 days. I've done this in the past but am trying a version without doing that this time due to time constraints (needing this for an event in 2 weeks). |

Notes: This is an all grain brekfast stout recipe converted to extract by me. I live in grand rapids and I can buy breakfast stout year round, I love it. The way I actually made it was by steeping 2 oz. kona beans and .5 oz williamette after flameout for 20 min. the coffe flavor is much stronger than the real stuff but I like it. And I accidentally used kona in primary and I could not find sumatra coffe for secondary so I used java beans. one thing i dislike about breakfast stout is that it is sweeter than i prefer. This recipe i did not think was sweet, closer to son of a baptist coffe stout with cacao nibs swetness and flavor, which is great. If you notice i put oats in the grain description, what I did was a mini mash. Combine all grains and mash at 156F with 1 lb of the LME for 45 min in 6qt water. sparge with 6 qt water at 168F. The lme is necessary in the mini mash for the oats to give the proper profile to the beer, I did this in a pot on an electric stove, make sure to turn the grain sock over every 5 or 10 min to avoid scorching the bottom of it. (mine slightly scorched and it was still good/ not noticeable)primary 4 weeks and secondary with beans 1 week. If you do it with 20 min bean steep after flameout you will have a beer that is not like breakfast stout, instead much more coffee profile, the original recipe can be found here: http://www.beersmith.com/forum/index.php?topic=12090.0
any questions pm me, I am not on often but I will reply when I see it.
one more thing: add 4 lb malt after the minimash is done, bring the wort to a boil remove from heat and add lme while pot is removed from heat. dissolve completely and return to boil then add first hop addition. add 5 lb lme to wort for 10 min the same way
Btw this is my first ever brew, about 30 hours of research went into education before i decided I had enough education to brew anything. Also the best advice I got for beer turnout is this: ( curtousy of (nosybear)
these are the main factors to its flavor:
1. Sanitation
2. Temperature control during fermentation
3. Yeast health, including how much you pitch
4. Keeping a good boil going, and,
5. The recipe.

Notes: Chill wort to 50 degF and pitch yeast at 50 degF. Starter recommended.
Ferment at 50 degF until 75% attenuation reached (5-7 days), then ramp up to 60 degF for diacetyl rest until FG is met.
Gradually ramp down to 34 degF. Once temp is reached add gelatin finings. Leave gelatin finings in for 3 days. Then rack to keg or bottle and allow 4 more weeks for lagering. Better flavor occurs with longer lagering period of 8-12 weeks.
Carbonate to 2.7 vol CO2.
