***Tasting***
I (and everyone else) preferred the brown sugar to the stevia. Aroma was less than desirable. Extract to correct aroma? Next time back sweeten with concentrate. |

Notes: Mix 2qt water and all of the honey warm water bath will help
Make Hibiscus tea with 1qt 3/4c of water and dried hibiscus boil water then steep for 30 min when cooled to 70 degrees add to honey and water mixture
One the mixture has reached 70 degrees pitch yeast and 1/4 tsp of yeast nutrient
At 24,48,72 hours add 1/4 tsp of yeast nutrient after slowly stirring to off gas the must
After two weeks transfer into a secondary fermenter and dry hop with the centennial hops additional transfer to help clarity
After 1 Month Stabilize mead with potassium metabisulfite and potassium sorbate
Back Sweeten if desired
Bottle and age at least 6 months |

Notes: Kettle Sour Steps
Starter
-Create a starter with 200 g DME, 2L of filtered tap water, and a pinch of yeast nutrient.
-Add 1/2 tsp 88% lactic acid (should get pH down < 4.5).
-Chill to ~110ºF, add 2 cups uncrushed rye malt.
-Top the starter off with carbonated water. This will purge oxygen and reduce headspace.
-Cap flask with airlock. This will ensure the aerobic competitors do not get the oxygen they need to produce off-flavors.
-Keep the starter as warm as you can (~110ºF is best) for 2-3 days. Strain then pitch directly into wort.
Mash
-Mash in, collect wort, and reduce pH to 4.0-4.3.
-Boil for 15 min (no hops!).
-Cool to 100F and pitch starter.
-Purge headspace with CO2, cover w/ Press'n Seal plastic wrap.
-Hold as close to 90-100F for 24-48 hours.
-Check pH in 24 hours, hold for additional time (if necessary) until pH is 3.2-3.6
-Once desired pH is reached, complete boil and continue as normal. |

Notes: This is for my friend who wants to dye this beer green for St. Patricks day. No real style that we went for, just brewed our pants off :)
Partial-extract that went very well for our brewing session.
Came out darker than expected. When transfered to Secondary.
Dying green worked out well, anyone who has this beer will be surprised by the green color! 2 drops per bottle at bottling time. |
