Notes: Pulled form Michael Tonsmeire's book "American Sour Beers". Excellent book, must buy.
Book instructs to ferment on yeast slurry from a flemish red. I will be adding this wort to a yeast cake of Roselare 3763 from a Flanders brown that just finished primary.
Variation - Add medium toasted american oak soaked in red wine after primary. Add more oak as needed @ 6 months. Boil oak for 10 min to reduce tannins. I subbed Chinook for Galena since it is a 90 min addition. Still hit 28 ibu.

Notes: Could have added more chococolate & vanilla easily.
Soaked 6 oz cocao nibs in whiskey for 2-4 days
take that liquid, freeze it, skim fat and put extract into keg
Added 32 Oz dme for 3 lbs
96 Oz sparge
took me to 5.8 G or so after starting at 4.8 G
Og 1.099
Fg 1.023 + 5 Oz of whiskey w nibs or so = 10.25% est.
overnight step mash
Nibs idea:
I use nibs all the time. Should soak in 80 proof for 24, go ahead and dump the liquid in your beer too. No more than 5 days on the nib soak including the soak time. They begin to become bitter if in too long. One combat if searching for chocolate flavor, since we eat commercial chocolate we are expectant of a certain type flavor, which is a lot of vanilla. Pull 2 oz off and use a dropper with vanilla extract to check it out. 5 drops is about a TBSP in a 5 gal batch for some math.. So if you like 2 drops use a tsp and a half or a half of a Tbsp.
can also freeze end product to skim fat off |

Notes: Yeast: White Labs WLP300 OR Wyeast 3068 Weihenstephan Weizen
If you want more banana flavor, ferment at the warmer end of the yeast’s range.
The total wort boil time is 90 minutes, which helps reduce the S-Methyl Methiomine (SMM) present in the lightly kilned pilsner malt and results in less Dimethyl sulfide (DMS) in the finished beer. |

Notes: Double size (10 gal) version of my chocolate stout recipe.
Modified version of Rogue Chocolate Stout. Increased IBUs to be closer to the actual beer as the Zymurgy recipe incorrectly only has 40IBUs. Color was also very light, so increased roasted grains. The actual beer is 135L, so this is still pretty far off in color, but was shooting for a lighter / more chocolatey flavor. Added cocoa nibs to the end of the boil, need to determine if they are best served added to the secondary or to the end of boil. Chocolate extract is used in secondary to give strong chocolate aroma/flavor. I'm not sure about vanilla use, perhaps only a hint would be nice, but I may need to adjust to not overpower the beer. There is no vanilla in Rogue. |
