| Notes: This is a light lager prepared in a small pot overstrength and topped off to hit lite beerness. It is inspired by an amazing woman I know (Wren), and her porch of peace and comfort. The spruce tips should be blanched prior to addition. As with all my no boil methods the hops are added as tea, half boiled in 1L of water and strained, half in a large French press. |

OG (1.042, Range 1.036-1.044), FG (1.011, Range 1.007-1.011), ABV (4.16%, Range 4-4.5%), IBU (38.27, Range 25-45), SRM (50, Range 25-40)
- SRM is 5 outside of range making it a darker beer than expected of an Irish Stout
- Changes:
-- Scale from 1 gallon to 2 gallons for batch size
-- Changed boil time to 45 minutes from an hour and mash time to 45 minutes
-- Yeast changed from Irish Ale 1084 to Dublin Ale 151
-- Changed hops addition to 45 min |

Notes: Heated 85 litres of strike water to 75*C, added to mash tuns and then mashed in 30.5kg of grain at 2.78 litres per kg. Masked for 60 mins, infusion mash with no mixing or recirc.
Heated a further 85 litres of sparge water to 76*C and sparged to collect 150 litres of wort into the kettle.
Wort brought to the boil. Hop schedule in boil, 400g Nelson Sauvin at 10 mins from flame out, and 200g of Amarillo cryo hops at whirlpool 75*C for 15 mins. Then cooled to pitching temp 18*C overnight, starter of safale 05 added to fermenter. Wort aerated into fermenter.
Ferment underway within 24 hours. Held at 18*C for ferment. Pressure held at 5-7psi for duration of ferment.
Kegged and carbonated to 2.5 volumes. |
