preboil gravity1.061. (forgot to do mash out) maybe reduce the Lbs as the efficiency may improve? I did do a 6 gallon mash. Did 90 minute mash and boil. Og 1.064 with 58 percent efficiency. I will not do this big of a grain bill next time. This system cannot handle it. |

Notes: This is 3 Floyd's Brewing Co.'s Alpha King clone.
Step by Step:
Mash grains in 17 quarts(16L) water to get a single infusion mash temperature of 154*F for 45 minutes. Sparge with hot water of 170*F and collect 7 gallons of wort. Boil for 2 hours to reduce wort volume to 5 gallons. Add hops and Irish Moss at time indicated. Cool, aerate and pitch yeast. Ferment at 68*F until fermentation ceases, then rack to secondary with dry hops for another week. Bottle or keg and leave at fermentation temperature for a few days. Drop the temperature to 40*F for 1 week, then if possible go to 34*F for another week. |
