Notes: For my traditional sour ale I am choosing to brew a gose. I'm choosing a gose because when it comes to traditional, this is a very traditional german sour ale. I'm also picking this style because I rather enjoy it as well.
Starting with my malt choices: When brewing a traditional gose you want to have half of your matl split between Pilsner and Wheat malt. So i've chosen those two malts at 4lb's each making up 95.2% of the grain bill. I have also added 0.4lb's of Acidulated malt. I added Acidulated malt to help lower the pH since we are going to want it to be lower than a normal ale.
My Hop additions I chose because I wanted to use a German Bittering Hop. I'm using very little because I wanted to keep the IBU's low and in range for the Gose style.
I chose my yeast as German Ale Yeast because I want this to ferment out nice and clean. I plan to ferment it out in about 5-7 days, then allow to condition so I can add some kind of fruit in secondary. If i'm choosing now, I would like to do blackberries.
Some special steps in this brew that i'm doing is that i'm going to mash and lauter how I normally would, but would only boil the wort for 10 minutes and then I would transfer to an empty fermenter and add Wild Brew Sour pitch which is classiffied as Lactobacillus plantarum, a facultative hetero-fermentative strain.. This will drop the pH in the time that I want it to, it will also give my wort a citrus and tangy taste and produce the lactic acid I need to lower the pH to acceptable levels. This should get my pH to a level between 3.2-3.5.
If I brew this beer on March 20, 2020. I would expect it to be ready to drink by the second week of April. |

Modified for 5 gal. From the Easter Quad recipe by Michael Tonsmeire in AHA.
Make a 1.5 L yeast starter with White Labs WLP530 Abbey Ale or Wyeast Trappist High Gravity 3787 using a stir plate.
Saccharification Rest: 60 minutes at 152°F (67°C).
Batch sparged with 180°F (82°C). Collect 9 gallons of 1.092 runnings including 1 lbs of table sugar added to the boil, plus 1 gallon of final runnings (boiled separately on the stove).
Chill to 63°F (17°C), 60 seconds of oxygen. Pitch the starter. Leave at 63°F (17°C) to ferment. Warm to 70°F (21°C) after 3 days.
Add Cinnamon Sticks after Primary Fermentation
When fermentation is complete, package as desired aiming for 2.4 vol of CO2.
Dough-in cold at approx. 70 F with 24 qt H20
Slowly raise temp to 148 F and rest 75 minutes
Mashout 170 F for 10 minutes

Notes: Mill the grains, add the mash hops, and mash at 155°F (68°C) for 15 minutes or until conversion has occurred. Recirculate until your runnings are free of particulate, then run off into the kettle onto first-wort hops. Sparge and top up as necessary to get about 6.5 gallons (25 liters) of wort, depending on your evaporation rate. Boil for 75 minutes. After the boil, do a whirlpool step: Stir or recirculate to create a vortex; once the temperature has dropped to 190°F (88°C), add the whirlpool hops and steep 10 minutes. Chill to about 65°F (18°C), aerate, and pitch the yeast. Ferment at 65–70°F (18–21°C) until the beer reaches terminal gravity, then cool to 55°F (13°C). After 2 days, drop the yeast or rack into secondary, then add dry hops for 3 days, rousing hops each day with CO2 if possible. Chill to 33°F (1°C) for maturation for about 5 days, then package and carbonate.

Anyone who has ever stirred a fermenting beverage knows the foaming, triggered by the release of CO2, can make one heck of a mess! To help minimize this, you should mix the nutrient blend into ½ cup of must and add it back to the fermenter. Then begin to slowly stir the must to release the main portion of the CO2 gas. After the foaming has subsided you can begin to stir more vigorously. Mix the must well enough to introduce plenty of oxygen into the fermenting must. Oxygen is needed by the yeast throughout the growth phase. Oxidation is not a huge concern until you get past 50 percent sugar depletion.

From Fifth Season Gardening: Fining with Gelatin: (per 5 gallons of beer)
Add ¼ to ½ cup of cold filtered water to a sanitized measuring cup
Add ½ teaspoon of gelatin on surface
Let sit for 10-15 minutes to partially dissolve
Heat water to 150-155 °F (I usually do small 5-10 bursts in the microwave. You may also heat the water by adding very small increments of boiled water) DO NOT BOIL THE WATER, you will make Jell-O instead.
Stir and test temp with sanitized thermometer
Pour into fermenter or keg. Use care in avoiding unnecessary cold side oxidation.
Allow 24-48 hours to work its magic prior to packaging or serving.
