Notes: Single infusion mash at 155°F (68°C) for 60 minutes. Add first wort hops (FWH) as wort is being collected in the boil kettle. Boil for 60 minutes, following ingredient additions as listed. Turn off heat and let temperature drop to 198°F (92°C), add whirlpool hops, and whirlpool for 30 minutes. Chill to 70°F (21°C), transfer to a fermenter, and pitch yeast.
Two days after pitching the yeast, add the first dry hop additions (1 oz. Centennial and 1 oz. Azacca). After active fermentation has stopped, typically 4–5 days after pitching the yeast, add the second round of dry hops (1 oz. Centennial and 1 oz. Azacca). A day later, burp your fermenter (if possible) with a 30-second burst of CO2 to rouse the hops. Add 2 oz. Centennial and 2 oz. Azacca pellet hops 8–10 days later. Just before kegging your beer, bag and add last dry hop additions (1 oz. Centennial Cryo Hops and 1 oz. Azacca Cryo Hops) to the keg or bottling bucket. Enjoy!

Notes: I should call this "Blown Gasket Oatmeal Stout." The airlock blew off while I was away for a week, and I returned to see a carboy, crusted with dried krausen. Regardless, it actually turned out well.
The final volume is low because I lost a good amount of water due to the seeping of 2.5 lbs of grain and oats. I didn't top off, preferring a stronger brew with fewer bottles. I plan to top off next time though.
I lost about half a gallon of the batch due to the blown fermentation, but it turned out pretty well! Excellent head retention and dark amber appearance. It didn't have quite as much chocolate or roasted flavor as expected. There is a significant nutty/toasted aftertaste that adds character. I plan to cut the crystal 60L from 8 to 5 oz or so, and add a source of chocolate and maybe lactose. I also plan to use a yeast with better attenuation. I was surprisingly pleased with this one, especially as it aged! Regardless, there is room for improvement. |

Notes: This is an All Grain HopSlam clone I've edited from an earlier version (MB Hopslam). The malt in that version was spot on. However the Hop was way too weak. I am increasing the Hops on this one by 50% and shortening the Dry Hop time to 1 week. Last time with the same Grain amount I hit an OG of 1.11 (not a typo). |
