| Notes: Start fermentation at 50F for 48 hours and raise the temp one degree per day for 10 days. After 12 days, it should now be about 60F. Move the fermentor to a warm area for 9 days, then cold crash it at 34F to clear it up. Bottle or keg. Beer should be optimal in about 12 weeks. |

Added 200g extra flaked oats, 2 tsp lactic acid mash ph was 5.6
Oxygenated wort for 4 minutes. Og was 1.052
Used 4 tbsp yeast slurry and 1 litre of apple juice the night before. High krausen less than 24 hrs. Dry hopped 2 oz of sabro citra and eldorado
6th batch oxygenated wort for 4 minutes 1.052 og.
High krausen next day, added 2 oz citra 2 oz eldorado. 2 oz citra sabro 24 hrs before crashing
7th, everything same except 150g toasted barley, 350g flaked oats. 1 oz citra el dorado yqh grapefruit whirlpool, same for dryhop. 1 day after pitch, again 2 days before crashing
8th- as per recipe, used hydra, dry hop on day 1, 1 oz of each, dryhop on day 3, 1 of each.
9th 500g flaked 500g chit malt. Citra sabro galaxy
10th 650g flaked, 500g wheat, 500g chit malt. Amarillo bittering, 2 oz each sabro and bru 1 whirlpool. 1 oz each sabro bru 1 galaxy dryhop x 2.

i dont have any notes and cant remember how this beer turned out last time. Huella Melon. Good sentiments. anyway will brew this pretty much the same except changing the efficiency and specifying lutra. reused lutra from a rice lager.

repurposing for huell melon pale ale. with updated water profile results from ward, my water profile for this beer now looks a bit out of wack by the numbers but it worked well for the last beer so im just going to roll with it for now until i have time to figure out how to fix it.

measured 1060 OG i think i got more than 5.5 gallons. i accidentally grained into my entire volume of hot liquor. after mash i sparged a little with about 1.5 or 2 gallons of cold water. pre boil vol was like 8.5 gallons

revamping summer madness for this beer which will feature mighty axe julius hops instead of cascade. going with lutra again.

last week measured 1013 FG for 4.8%abv. but it does not taste that light. nice body and carapils flavor, also the dry hop was faint but nice. could maybe use more dry hop but in the interest of keeping it light and cheap and not-session-ipa, i think its perfect just like this.

Just had Port City Essential Pale Ale recently which has to be the tastiest pale ale on the planet...at very least it is one of my absolute favorite beers. this time it strikes me that it has a lot of not bitter hop flavor and decent backbone while still being 5.5%.
Their website says 35ibu so im knocking down the warrior contribution from 0.75 to 0.4oz. Adding more cascade in the flameout and dry hop (1oz-->2oz)
consider going 3oz in dry hop. maybe some pilsner malt or something else to add more malt backbone. vienna? but the carapils might be fine. at least to start.
need to review water. would like to use tap and adjust but unsure rn, been having off mash pH readings and low efficiency.

Notes: 1. Preheat 8.75 Gal to the Mash striking temperature of 161F.
2. Combine 2.9 Gal to the Mash Tun containing grains at striking temp (161F) allow to rest for 10 minutes as you reduce temp on remaining water (to sparge temp; 150F).
3. Combine 5.6 Gal of water, at 150F, to the Mash Tun.
4. Mash for 60 min, and perform stratification testing.
- If failed, add additional 10 minutes and repeat.
5. Vorlauf until grain bed is set and mash runs clear.
6. Transfer wort to kettle and bring to boil (retained volume should be approximately 7.3 Gal).
7. Boil for approximately 90 min.
- Add 1.5 Oz AU Helga Hops at time of boil, using hops sock.
- Add 1.5 lbs Light Brown Sugar to the kettle.
8. Place Stainless Steel Immersion Chiller into kettle for sterilization, at 30 min remaining mark.
9. At 20 min remaining mark:
- Add 1 Oz Styrain Goldings Hops, using a hops sock.
- Add 1 tsp Yeast Nutrient
- Add 1 tablet Whilfloc
10. At completion of 90 minutes,
- Turn off flame.
- Initiate immersion chilling to 68F.
11. Transfer wort to into fermenter (5 Gal Cornelius Keg).
- Utilizing inline Bouncer filters (50 and 80 mesh) via gravity feed.
- Insert Tilt unit.
12. Oxygenate Wort.
13. Add Yeast to Wort. Seal fermentation unit.
14. At fermentation completion, transfer to carbonation keg/brite tank via closed pressure transfer.
- Utilizing an inline filtration unit using a 5 micron carb stone.
15. Chill the fermentation keg to approximate 33F.
16. Carbonate beer, utilizing inline carbonation method.
- Carbonation in 45-60 minutes.
- Serve in approximate 2-4 hours after carbonation to allow for settling. |
