Mash as normal.
Boil 5-10 min to sterilize then bring down to 95 or so.
Sour with 1 carton good belly mango kettle sour, purge with some CO2, cover tightly, wait 2-3 days for that to do its thing.
Bring pot back to boil, boil as normal 60 min or whatever, do normal hop additions.
Cool to about 90F if using kveik yeast, slightly underpitch, toss in prewarmed fermentation chamber (90) but don't leave the heat on, let the yeast provide their own heat from then on. This also helps track the ferm time which is fast.
After Primary ferm, add 1 3lb can of Peach Puree from Harvest Fresh. Added after initial fermentation. (Add at day 3-5 or whenever primary is done -- note kviek should speed this up) -- give another couple days?
Consider a small amount of truvia to sweeten a tad or campden to stop ferm a tad early
Calc the addition from the peach puree as well to get the final blended OG/FG if desired.
We want to ferment *hot* and under pitch a bit to yet the kvieking yeast to its thing.

Notes: -BIAB water retention is 0.0625 gal/lb. Start with 4.65 gal water
-Mash normally, 152F for 60-75 minutes
-Boil for 70 minutes following the hops schedule
-Slowly add the Belgian Candy Sugar with 5 min left in boil
-Ferment starting low (62F) and raise 1F each day after fermentation starts for 2-3 weeks. Seems like this will encourage clean fermentation and release of ideal flavors, plus ferment all available sugars.
-high carbonation, if kegging go to 3.5-4 vols. If bottling, go to the limit (3 vols is spec limit)
This benefits from lager-style aging, but can be consumed immediately. Age for 12-16 weeks for best results per forums.
Brewed July 2022: OG was spot on, FG went all the way down to 1.001 for nearly 12% beer. Opened one after 3 days in the fridge - prominent alcohol taste, very fruity, not as dry as I hoped. It is certainly bright, strong, bold, fruity. Should also have spice notes.

Mix the honey with some warm water. Then mix in water more water for a total volume of about 15 liters. (or as much as you wish to achieve a certain OG).
Add the dry yeast. If you want to give the yeast an extra boost, it can be rehydrated with the addition of 1 gram of Go-Ferm per gram of dry yeast.
Ferment at about 17 - 18 °C.
Fermentation
Day 1 (one day into the fermentation)
Gently stir with a sanitized spoon or wine whip to degass the mead. Add 2,5 grams of Fermaid K and 1 grams of DAP.
Day 2
Gently stir with a sanitized spoon or wine whip to degass the mead.
Day 3
Gently stir with a sanitized spoon or wine whip to degass the mead. Add 2,5 grams of Fermaid K and 1 grams of DAP.
Day 4
Gently stir with a sanitized spoon or wine whip to degass the mead.
Day 6
Gently stir with a sanitized spoon or wine whip to degass the mead. Add 2,5 grams of Fermaid K and 1 grams of DAP.
After 3-4 weeks
Rack the mead into a secondary fermentation vessel, such as a PET carboy. The fermenter should be as small as possible to reduce the size of the air pocket. Put the fermenter in a cold, dark place so that it clears faster.
Bottle when the mead has cleared, or when it seems ready. Still mead is the most common. For this we recommend wine bottles and corks.
If you prefer a carbonated mead, you need to add priming sugar before bottling. For this we recommend champagne or beer bottles. |

Single-infusion mash at 150º F (66º C) for 60 minutes. Draw 6.75 gallons (26 liters) of wort and boil 90 minutes. Chill to fermentation temperature of 70-80º F (21-27º C). Whirpool and allow 15 minutes to settle.
Ferment in open container (i.e. non-pressurized, for example with loose foil over the carboy mouth) for the first few days in primary. Add airlock after high krausen and ferment for at least three more weeks. Carbonate to 2.5 volumes or prime and bottle.
