Notes: Add appropriate water chemistry tweaks. I am using RO water and added ~4 gram CaCl along with some Campden tablets to try and reduce O2 issues. FEEL FREE TO ADD MORE HOPS AT THE DRY HOP STEP! I ran out, so I didn't have more to add. Targeting 2 oz / gallon. Additionally, I added 1 teaspoon of a munich (wheat) beer yeast (lallemand munich dry yeast). |

Prep Oak Cubes
Boil 90 minutes
9 grams Amarillo @ 45 minutes
2 packets of Safale US-05 and ferment at 68 degrees until completion.
Rack over to Fermonster on top of oak cubes (see below). Pitch GB150 and just let it go. Ferment at 72 degrees.
Weigh out 0.30 oz. (8.72 g) of dry oak cubes. Boil for 10 minutes and dump water. Boil another 15 minutes and dump water. Add Knob Creek bourbon to oak cubes in a sanitized glass container on brew day and store in a dark place until adding.
Cold crash for 3 days before packaging.
Keg and carbonate to 2.2 volumes of CO2
**UPDATE**
A truly amazing beer. Will be re-brewing for sure with one minor change (more oak - up to 0.4 oz.). Hints of dark fruit with notes of cherry and slight oak. After 4 months in the fermenter beer finished at 1.001 for a 9% beer, that has ZERO hints of alcohol. Carbonated to 2.8 volumes in Belgian bottles.

Notes: I made this version and it is so much smoother and cheaper than the original recipe. More information can be found at berusbrewery.com Pliny the Elder 4.0. The Author Scott explains how he came across this recipe and his perception of it. I made this with minor tweaks. I used magnum hops for bitterness. and scaled back the hop additions 1 oz at 0 minutes. I added 30 pounds of 2 row and 10oz of sugar cane for easy math. I am going to brew this version soon I will post my version as Pliny the Elder 4.1 and gallons. |

Densité supposé : 1,075 pour qu'ajout de 3L d'eau tombe à 1,050.
-Mash pendant 1h00 puis, ajout de 3 Litres d'eau bouillante pour amener le tout à un volume d'environ 12 L.

Bon petit goût léger, on sent pas trop le houblons Saaz. C'est pas tant crisp.
Fermentation dans un bac d'eau avec des icepack pour essayer de descendre la température...Température du moût doit être à environ 20 degrées et température extérieure genre 25.
