Notes: Traditionally, this style of beer shouldn't have a lot of or next to no bitterness. Original version of this recipe had the 60 minute hop addition detailed as 40g however this gives the beer an after taste of lingering bitterness which I would not describe as off putting but it was certainly undesired.
Dropping the 60 minute addition to 20g will obviously reduce the overall IBU (untested by myself) however feel free to play with bitterness levels at the 60 minute boil mark or even omit that addition completely. Dealers choice! |

Yeast: Sussex yeast if possible, this can be harvest and grown from Harveys Stout or see list of varieties to try

-This recipe Does Not Include Yeast-
Yeast: it seems a lot of people have been growing up yeast from the actual beer as its a key ingredient to deliver a true flavour. The origin of the yeast is supposedly Tadcaster, but it has been used constantly over 50 years to develop into what it is today.
Otherwise you could use WLP017 (Whitbread strain) or WLP002 (fullers strain) and WLP005 (Ringwood strain), or try using Wyeast 1469 West Yorkshire or WLP037 Yorkshire Square, Bedford or other traditional English strains.

Notes: OSG 1.056. A little darker than what I wanted. The roasted barley was 525L which is almost twice as others.
Crashed on day 5 because it was at 1.006 and still fermenting. Crashed at 38degrees for 3 days and kegged day 8. Very good, malty, caramel, smooth and dangerous at 6.5 abv |
