Notes: Water treated with brewing salts to our Balanced flavour profile: Ca=50, Mg=10, Na=16, Cl=70, SO4=70 (Hit minimums on Ca and Mg, keep the Cl:SO4 ratio low and equal. Do not favour flavour / maltiness or bitterness / dryness. For balanced beers.). While this balanced profile is our preference, for something closer to Westmalle water, in his book Brew like a Monk Stan Hieronymus indicates to use: Ca=41, Mg=8, Na=16, Cl=60, SO4=26. Try brewing it both ways and see which you prefer. For more information on how to adjust your water, refer to our step by step Water Adjustment guide.
1.25 qt/lb mash thickness.
Start the mash at 131F and hold for 10 mins (high end of the protein rest range).
Ramp up to 149F and hold for 90 mins (beta rest).
Ramp up to 155F and hold for 30 mins (alpha rest).
Raise to 168F mashout temperature and hold for 10 mins.
If your system does not allow for step mashes, try a single infusion mash at 150F for 90 mins, followed by a mashout to 168F for 10 mins (if possible).
~90 min fly sparge with ~5.6-5.8 pH water (measured at mash temperature). Collect 14.9 gallons.
Boil for 90 minutes, adding Whirlfloc, hops, and candi syrup per schedule. Lid on at flameout, start chilling immediately.
Cool the wort quickly to 62F (we use a one-pass convoluted counterflow chiller to quickly lock in hop flavour and aroma) and transfer to fermenter.
Oxygenate the chilled wort to a level of 14 ppm dissolved oxygen. For more information refer to our Aerating / Oxygenating Wort guide.
Pitch yeast and ferment at 64F (wort temperature), allowing temperature to rise to 70F over one week (raise 1 degree per day). We use modified stainless fermenting buckets in wine fridges.
Allow yeast to continue until finished. Do not allow temperature to drop. If yeast seems to be stalling, do not be afraid to raise temperature as high as 75F to ensure proper attenuation. Assume fermentation is done if the gravity does not change over ~3 days.
Rack to a brite tank (we use 5 gallon glass carboys) that has been purged with CO2 to avoid oxygen pickup, add 1 tsp of unflavoured gelatin dissolved in a cup of hot distilled water per 5 gallons of beer, and allow to clear for 2-3 days.
Package as you would normally. Though some will argue that a Dubbel should only be bottled, if we still had to bottle we wouldn't be brewing beer. |

Notes: Brew Day Notes:
- Didn't mill the oats finely enough
- Mash didn't convert as indicated by iodine test, but I didn't allocate enough time so I had to use what I had. Next time I'll allow for a much longer mash.
- Added first hops before hot break, probably wait till after hot break next time.
- Didn't use a spider or bag for hop pellets, and whirlpool was a failure (I'll blame it on finishing up at 2am), so lots of hops made it into primary from the boil.
- SG for the Apple Juice (Kirkland Not From Concentrate): 1.052
- SG for the Oat Wort before boil: 1.024
- OG: 1.054
- Pitched slightly warm (~70-75f), cool down past fermenter temp next time (~50-55f?)

Ferment Notes:
Kept at 62f for the first two days, slowly raised to 68f over the next week. Left in primary for 25 days, racked to keg. Medium krausen, the blowoff tube I installed rather than an airlock proved unnecessary.
FG: .998; Bone Dry.
Hopefully will get some more unfermentable sugars with a better mash procedure, but it may be necessary to kill the yeast with a campden tab after primary and backsweeten as with a cider.

Carbed @30psi for 36hours before purging and reducing to 12psi.

Taste Notes:
Deeply unpleasant musty hop? funk when tried ~24hours after reducing pressure to 12psi rendered it undrinkable, but that was probably a hasty judgement. After an additional 6 days that's mellowed out significantly, and hopefully will continue to do so. Other flavors are pleasantly floral, earthy, and spicy. The apple juice is not dominant, but leaves a mild flavor and a slight tang. Oat flavors are subtle, probably again a factor from the failed mash, and mostly fade into the background. |

I`ve made this brew 7 times now,and it is a mainstay for my woman.I`ve used US-05
WLP 029 and WYEAST 2565 all with great
results.Used Williamette in place of
saaz and prefer it.Last batch came out
at 6.0 ABV with a modification to my fly sparge setup.Grain bill holds at 11 lbs.
Last batch was with WLP 029,I think Wyeast 2565 was the best of the 3 yeast types that I have used. (just me and swmbo`s thoughts).
Made batch #8 with US-05 on 4-19-13
used 4 Madagascar vanilla beans soaked
in vodka for a week and added to secondary
It added a bit more vanilla flavor.Nice addition for added flavor.Will make this
a regular step in future batches,recipe
has not changed but 2565 rules the brew.
I made batch #9 on 9-22-13.Used original recipe with wyeast 2565, by far the best.
Bottled on 11-1-2013.The only tweak was
adding 12 oz clover honey at flameout.The
Vanilla beans in secondary are the bomb.
Recipe will not change from here on out.
This batch started at 1.057 and finished at 1.01 - 5.51 ABV.It is exactly where I Want it. SWMBO and my friends love it.I like it alot too but I am more of a stout
porter guy.I hope you like it and have good luck with it if you try it. -enjoy-
12-8-2013 Vanilla flavor has mellowed
nicely,lacing last`s till the end of the glass.Very pleased with this batch.
Batch #10 1-23-2015 recipe has not changed
will be bottling in about a week or so.
This brew is our house brew all year,it`s
one for the ladies.Will be ready for St.
Paddy`s day.
batch #10 is long gone.Finally retired and will be moving to Florida in 2 weeks.I will update next batch when I brew in in the heat for the first time,Goodbye Chicago.I hope you enjoy the recipe.-Will be back to brewing soon.
