| Notes: Based on a recipe on this site from Brewer #43976. Much obliged. Adapted to volume capabilities and available ingredients here. I had a surplus of Japanese Sorachi Ace and American Amarillo and I wanted to put them together. "Tamatsuki" means literally "balls hitting against each other"...but not like that. It's used in politics to describe tensions between nations. Two hops, two sides of the Pacific...that kind of thing. |

6.0 lbs strawberry puree (added 2 days after fermentation start) [For the puree, took 6lbs of frozen strawberries, added 1.5lb of lactose on stove with ~12oz of fermenting ‘wort’ and heated gently to around 180F for ~15 minutes, to ensure no contamination of wild yeast)
