Notes: Make 1L yeast starter at least 48 hrs prior to brew day.
Taste: Malty flavor. Lots of nut and caramel undertones. Consumes your mouth with flavor.
Color: Color is perfect for a brown ale.
Smell: Heavy caramel smell.
Things to Change: Increase carbonation slightly (changed in recipe already). Possibly reduce Amber grain to roughly 15% of grain bill to lessen strong nut and caramel flavor. |

Notes: 3/25/11 - 1.019. 1.25 oz muddled mint leaves, 6 oz of baker's chocolate racked into secondary fermentor. Tastes real good, slight off taste that lingers, otherwise real good.
3/28/11 - 1.018 - Real strong mint flavor, hopefully the carbonation and cold serving temp will dull the mint out a little. Want to bottle ASAP so the mint doesn't grow anymore. Wish I could get some more chocolate and less mint. I do love mint, but I don't know if others will. |

Notes: Original starting gravity was 1.046, finished with a FG of 1.011. sample tasted. was very crisp, clean and surprisingly dry finish for the gravity being higher than expected.
Used 1/2 pint of US-05 yeast from "The American Cream ale" and made a 1.5 liter starter with it on brew day about 5 hour's before pitching. took off in about 4 hour's and finished in 3 day's. fermented at 65 F for 5 day's then raised temp to 71 F for 10 day's, brought down to 60 F the next 4 day's. |

Notes: Cranberries are dried.
Honey is unfiltered Orange Blossom Honey.
Brewpot has 3 gallons water. Use 32 oz in second pot, boil, turn off heat, add cranberries and stir as it cools. Make puree and add 7.5 minutes before end of boil into main boil pot.
Add honey after flameout, let sit for 10 minutes.
Put in nutrient and enzyme just before yeast.
Ferment 4 weeks. Bottle condition for 2 weeks. |
