Notes: Mash grains 66°C for 90 minutes. Boil wort for 75 minutes adding hops per scheduled times. Cool wort to room temperature and drain or rack the wort off of the trub. Aerate the cool wort and oxygenate. Ferment 19°C) for 10 days in the primary and 2 weeks in the secondary.

Notes: Mash at a fairly low temperature, 148° F to allow for the drier style. 60 minute boil with the addition of 1 ounce of dried juniper berries with the 1/3 ounce of Azacca hops. The remaining hops are added at flame out.
Chill the wort to no less than 85° F. Under pitch the Omega brands Kveik yeast and maintain the temperature throughout the whole fermentation. This hot fermentation will allow for the yeast to produce esters of pineapple, mango and other citrus from being stressed and under pitched.
The beer can then be chilled and kegs in only 10 days! |

A beautiful IPA that is well balanced with Crystal and Cascade hops, and spiced up with adding coffee!

## Notes##
Dry hop in secondary by adding pellets directly to carboy. I let it sit for 3 days, but could stand for up to 5. Any longer and you'll get a grassy flavor.
Coffee used is Lucky Jack Cold Brew CONCENTRATE. It was not diluted. This is a key point to add. We came up with the ratio by measuring out 1 cup of IPA and adding 1/2 tsp a time until we got a flavor profile we liked and then scaled up.

Notes: Inner health IBS support - Lacto plantarum is used to sour.
Mash as normal, 15 minute boil to pasteurize and cool to 25 C.
Measure pH, adjust with lactic acid to 4.5.
Add lacto in fermenter and seal.
Measure pH and boil when pH is at 3.8 or lower.
