Modified recipe. It produced great beer, but I'm adjusting my system from 6.5 lb of grain to 8 lb, and the efficiency needed to be raised from 60% to 72%. I also want to tone down the alcohol a bit, because I want to drink too much of this beer and I'm just getting drunk.
Was OG 1.066, FG 1.011 (7.24%), IBU 76.26, SRM 6.78
The C20 was 12%, I should keep this. I think just below 7% would be good. It needs a strong backbone to carry the hops. 2 packets of yeast should be fine. I'm also trying to trim costs.
I noticed I was a little low on the bittering hops so I bumped up both from 1 oz to 1.2 oz. now IBU 91 |

Hopstand/Whirlpool for at least 45 minutes at 155-170 F. Proceed to quickly cool to 60 F after the hopstand is complete.
Dryhop is split into two, 4 day schedules. Add half then remove 4 days later. Proceed with the remaining half for another 4 days and then remove, cold crash, bottle. |

No clarifiers...meant to be hazy.
Split open and scraped vanilla beans; then dissolved them in 50ml of vodka for about 3 weeks before adding at the kegging stage.
Put toasted coconut in a muslim bag at kegging time. It needs to be weighed down to sink.

"English pale ale
The earliest mention of the term Pale Ale comes from an English newspaper, in 1704. By the 19th century, Pale Ale was a beer of regular strength (4.5-6.0% ABV) that could appear bottled or on draught. 21st century examples tend to be 4.0-5.0% ABV). Classically, the style showcased English hops in a beer mashed from 100% pale ale malt. Its flavour by repute was clean and assertive, grassy but perfectly balanced, lacking the cruder hop kick of the English version of its fêted sibling, IPA...."
This simple recipe is very similar to "1864 Lovibond XB" described in Ron Patterson's book "The Home Brewer's Guide to Vintage Beer". It's interesting that the recipes for 19th century pale ales collected in Ron's book do still have quite a strong "hop kick". |
