Notes: started with 8 gallons. Had the hop stopper in the kettle. I had around 7 gallons after the mash. First running was 1.044. Perfect.
The 1 hour boil brought it down to about 5 1/2 gallons and SG of 1.066!
Due to the hop stopper, I was only able to keg about 4 gallons. |

Notes: Modified a Kolsch recipe because I feared the fermentation temperature was too high (June/July in Ontario).
The last saison I brewed was a pretty similar recipe, and the one bottle that survived my thirst for 6 months was by far the best tasting bottle (they were all delicious though). I will try to age more bottles from this batch and report.
-The Simcoe hops did not smell great to my nose, depending on beer taste, may switch them next time
-After 3 weeks in the bottle it tasted sweet and a bit gross
-After 5 weeks it became sour
-After 7 weeks the sourness mellowed and is a bit sweet and sour. I like it, my brew partner doesn't. |
