A heavy hitting combination of rich malt flavours and relentless, bitter hops. Aromas of caramel and toasted marshmallow, with raisin and dried fruit, alongside a spicy undercurrent of resin. With toasty malt and sweet dark fruit flavours, and a smooth, chewy mouthfeel, you’ll be lulled into a false sense of security, before the intense pine-sap resin draws out a huge bitter finish. Leave this beer to chill in the cellar for a few months to round off the flavour profile.

Notes: 高知県産の柚子と塩を贅沢に使用したゴーゼ。苦味は控えめにして酸味と塩味とのバランスを重視した。味のイメージはドライな柚子サワー。ビール好きな人にはもちろんビールが苦手な人でも美味しく飲めるがコンセプト。
For the recipe, I recommend a mineral-rich salt. We use a local sun-dried salt, but Sel de Guerande is another good option.
I suggest adding the yuzu zest to the boil. The bitterness extracted from the peel will add a nice character and a more complex, well-rounded fruit flavour.

Notes: Mash at 153 °F (67 °C) for 60 minutes. Ferment at 68 °F (20 °C) with for 7-14 days primary. Transfer to secondary for 7-14 days to clarify. Use a yeast starter made from a bottle of Bell's Oberon if available instead of WLP001.
Build up a starter of yeast from oberon dregs instead of California if available. Use only 1 oz coriander then. |
