Notes

Modified a Kolsch recipe because I feared the fermentation temperature was too high (June/July in Ontario).

The last saison I brewed was a pretty similar recipe, and the one bottle that survived my thirst for 6 months was by far the best tasting bottle (they were all delicious though). I will try to age more bottles from this batch and report.

-The Simcoe hops did not smell great to my nose, depending on beer taste, may switch them next time

-After 3 weeks in the bottle it tasted sweet and a bit gross
-After 5 weeks it became sour
-After 7 weeks the sourness mellowed and is a bit sweet and sour. I like it, my brew partner doesn't.
