| Notes: Mash at 150 degrees for 60 min. Mash out at 170 degrees for 10 minutes. Collect 6.5 gallons. Boil for 60 minutes total to eliminate DMS. Add hops as described. Chill to 50° F. Oxygenate with pure oxygen for 3 minutes at 1 L/minute and pitch decanted starter. Add honey on day three. Using Tasty’s fermentation schedule as a guide, let free rise to 52° F and rest for 4-5 days. Then raise to 58° F for 2-3 days; then raise to 62° F for 2-3 days. Once terminal gravity is reached, slowly chill to 34° F by dropping the temperature 2-3° F per day. Keg and lager for 3 months, but taste along the way because that’s just too long to wait. |

Notes: Put kazbek hops after flame out into the wort and let it be there for 15 mins with closed lid. After 15 mins, start cooling.
Ferment at 18°C for 72 hours and then increase the temperature by about one degree per day until you reach 22°C.
After 3 days of fermentation, place the oak chips onto an oven for 10 mins @180°C to sanitize it. After cooldown add it to the beer for 7 days.
After fermentation is complete, cold crash the beer (2 days @1-2°C).

10/01/22 - 2g Helvitcus (10g/hl) added after mashing completed/wort collected(?). Held at 40c for 24 hours.
11/01/22 - pH down to 3.5, wort brought to boil. Wort chilled to 24c, Safale US05 pitched. Cooled to 18c over 4 -6 hours.
12/01/22 - No apparent ferment activity.
13/01/22 - Temp raised to 20c, ferment activity slow.
15/01/22 - Ferment active, SG 1.024
17/01/22 - Fruit pastuerised at 68c for 30 minutes, cooled and added to fermenter.
21/01/22 - SG 1.012
23/01/22 - Temp raised to 21c
25/01/22 - Cold crashed to 3c
29/01/22 - Kegged, FG 1.012 ABV 5.5%
Final notes: Tasted great though US05 yeast slow to start, recommend 2x packs.

In collaboration with the awesome Oskar Blues from Colorado, we created this big, twisted 10.5% American style barley wine. Big boozy aromas and a sweet viscosity, packed in with some heavy-hitting C-hops, for an intense bitterness to balance this full-bodied malt monster. Age this beer in the cellar for a few months to allow the warm alcohol flavours to reduce.
