Notes: VERY IMPORTANT: You do not add the honey to the Mash or the boil. Instead, mix 4 lbs of honey with sterilized water around 95 deg F (35 deg C) in a sterilized Jug or large jar. Cap the jar/jug and shake vigorously until the honey is integrated completely with the water.
When you are chilling the wort and you hit about 95 deg f, pitch then honey/water mixture (In meadmaking, this is called 'the must') into the wort. Before transfering to the fermenter, ensure that you stir the wort well to integrate the must.
Why? Nutritional and flavor compounds start to deteriorate at higher temps. Honey is abiotic and usually will not negatively affect sterilized wort. At high enough temps, honey caramelizes and looses almost all of the delicate honey flavors and nutritional benefits.
Version 1.2: This version uses Kveik (Imperial yeast Kveiking) as the yeast type. It's completely untested. For a more standard option, use Belgian or Scottish ale yeast. I have previously made this with Wyeast 1728 or Imperial yeast "Tartan". |

Savagely bitter, exceptionally dry, this IPA is born to die on a predetermined day. It proudly displays its short-lived life span front and centre. There is no better time to drink this than the moment you get your paws on it. Awesome bitterness backed up by unrelenting aromas of resin, citrus, and juicy fruit. Born To Die is a eulogy to the hops that sacrificed themselves in its creation. An incredibly ambitious and satisfying small batch brew. Fresh is best with this beer. Use fresh hops in the brew and during dry hop stages. Condition just long enough to let the powerful grassy aroma cut back - and drink.

updating recipe for brewhouse efficiency from 60 to 69. will live with the abv boost. changing to 90 min boil because of the pilsner malt.

Version 2 : this time im changing the malt base based on a recipe from byo. https://byo.com/recipe/tripel-the-light-fantastic/ to try to get a lighter color. leave the yeast and hops the same. will ferment slightly higher this time to try to get some more spice clove banana going on. need to boil for 90 mins with pils malt. original recipe says to mash at 148 for 45 mins.

8/15/19. this came out a bit darker than I wanted, deep golden / orange. next time i would like to aim for light, yellow color. it was lacking much spice and belgian character. also the bottles were slightly undercarbonated for the style. like probably as carbonated as most of my bottle conditioned brews but i wouldve liked it a little more bubbly.
