Optimum Target pH: 5.4
Working pH range: 5.2 - 5.6
The source water here is about 7.9pH, so you'll hit your mash pH of about 5.45ish with the malt and salt additions. No acid required!

Notes: Fermentation temperature is an ideal maximum - we can only really get mid-20s/30 with our kit.

That blog is pretty much the bible for anything kveik related - it's written by the same person who discovered kveik being used by small farmhouse brewers and brought it into wider use.
Target pitch rate is drastically lower than what brewers friend will let me set - reasoning is taken from the above blog. Aiming for approx 30 billion cells for our wort strength and size (as suggested in 'historical brewing techniques' by the same author)
Not 100% if I want to reduce IBU / hop flavours further - might add a small amount of dry hops but leaning towards not.
What hop varieties actually go in will be decided on the day as I think I want something a bit more old-world but it depends on what's in the freezer.

Notes: Mash low with 1 vial of WLN4100 Ultra-Ferm
Lauter mash but do not heat to allow enzymes to continue to break down sugars
Sparge, lauter and allow wort to stand for ~30 minutes to allow enzymes to continue to break down sugars
Boil for 60 minutes and follow hop schedule - I used a different hop schedule than Kim did.
It is recommended you add more yeast nutrient to fermenter half way through fermentation
Edit 9/18/18 - My first run on this came up a bit short on FG (1.006). Still pretty dry and amazingly juicy, but really want to get it down to <1.000. May try 2 vials of the WLN4100 in the mash next time and maybe some glucoamylase in the fermenter. |
