Notes: Mash at 150°F (65°C) for 60 minutes. Collect the wort and begin a 60-minute boil with a single hops addition for bittering only. Cut up the chile peppers and steep the chile pepper blend and cinnamon chips in a nylon bag in the hot wort for at least 10 minutes after the boil is complete. Ferment using a neutral ale yeast at 68–70°F (20–21°C). When the final gravity is reached, steep the “dry spices” in the fermented beer for 3–5 days.

58l in the hot water tun = 40cm
Mash in about 25l at 78 in the hot water tun to give 67.5C mash for 60 mins
Sparge collected 49l at 1.041 57C 31cm (1.053 adjusted) - at the end I was seeing 1.018 adjusted out of the mash tun (1.006 at 57)
41l at 1.060 in the fermenter but I forgot to add the dextrose so will drop that from the recipe and update the efficiency - 72% includes losses for hops.
Finished perfectly at 1.013
When it got to high Krausen the temp got up to about 21C but cooled after 12 hours and fermented at 18.5C then finished for 24hours at 22C

Notes: In a stainless steel mash tun, heat 16.2 quarts of water to 128 degrees, ad ph stbilizer and grains for a 30 minute protein rest. Add 9.17 quarts of boiling water to raise temperature to 152 degrees and hold for 1 hour. Add heat and mash out to 168 degrees. Sparge with 200 degree water to get 7.5 gallons. bring to a boil and add bittering hops. after 75 minutes add whirlflock tablet. after 85 minutes, add candi sugar, 2.5oz. of ORANGE MARMALADE not
Oregon Fruit Tangerine, bitter orange peel, coriander and aroma hops. cool to 68 degrees, transfer to fermenter, oxygenate and pitch yeast. ferment at 68 degrees for 1week then rack to carboy for 2 weeks. Transfer to bottling bucket and add sugar boiled with 16oz. of water. Bottle and condition for 2 weeks. |
