| Notes: This recipe uses a multi-step mash with a mashout. On brew day, mash in all the grains at 104 °F (40 °C) in 22 qts. (21 L) of water and hold this temperature for 10 minutes. Raise the temperature by infusion or direct heading to 131 °F (55 °C) for 15 minutes, then raise to 146 °F (63 °C) for 40 minutes, then to 158 °F (70 °C) for 15 minutes. Finally raise to 168 °F (76 °C) for 15 minutes to mashout, recirculating. This step mash helps provide a more attenuative wort and improves clarity. Fly sparge with 168 °F (76 °C) water until 6.5 gallons (25 L) of wort is collected. |

| Notes: Mash all grain 60 minutes @154, fly sparge until 7.0 in boil kettle. Boil, add warrior, 20 minute hop stand with 6 oz hops. Then rack to fermenter, pitch omega yeast (took about 36 hours for airlock activity). When krausen begins to fall around day 5-6, add dry hops. Let sit on dry hops 3 days, cold crash 2 days, rack to keg. |

- Mix Mash every 15 Mins, 1.5Hour Mash Minimum.
- Mix mash at-least twice when sparging.
- Use the extra wort run off to clean out the pump of higher quality wort by putting it in the boil pot when empty.
- Take a pre-boil reading and re-flow more sparge or just left over sparge if necessary. (pre boil should be higher than target SG)

You can increase hops to turn it into an IPA/DIPA, but for a maltheavy but crisp heavy ale , This is a good beer. Hides abv quite well. Dangerous because it could be mistaken for a session ale |
