Notes: NOTE ON MASH:
Steep corn grits separately in 1.5 gallon of water at 145º for 20 minutes, then add to the main mash and grains after the 122º step. This should bring the total mash volume in the main kettle to 8.5 gallons.
NOTE ON FERMENTATION:
Rack to two different 3 gallon carboys. Ferment with Oud Bruin yeast for 1 week. To one carboy, add all of the LAB; to the other, add the Lochristi brettanomyces. Age at ambient temperature for no less than one year, up to two.
POST-FERMENTATION OPTIONS:
1. Blend with cherries or raspberries after 1 year.
2. Blend with one or more batches of different ages.
3. Serve unblended, bottled and primed with sugar. |

Notes: Instructions:
5 gallons of cool water into brewpot
Fill grain bag with Briess malt; add to water, heat pot up to 170 F stirring every 5 mins
When water reaches 170 remove grain bag and let drain without squeezing for 1 min
As water begins to boil, remove from heat and add DME; return to heat
Add Tettnang hops after boiling 5 mins
Boil 60 mins after adding hops
Add back 1 gallon clean water
Special Instructions:
At start of boil, put dried lingonberries in the blender and cover with wort from the kettle. Puree, cool, and add the pectic enzyme. Refrigerate for one 1 day. Add this mix to the fermenter on day two of fermentation.
After 30 minutes of the boil, remove two cups of wort to a smaller pot. Heat the wort to keep it hot, but do not boil it. Add the yarrow, meadowsweet, and birch syrup. Steep this mix until the end of the boil, then strain it into to the kettle.
Add the cranberry concentrate and honey immediately after flame-out (end of boil).

White Labs WLP001 (California Ale), Wyeast 1056 (American Ale), or Fermentis Safale US-05 yeast
Mash the grains at 150–152°F (66–67°C).
Hold this temperature for 60 minutes.
Mash out, vourlaf, and sparge.
Boil the wort for 90 minutes, adding hops at the time indicated in the ingredients list. Chill the wort and pitch the yeast.
Ferment at 68°F (20°C). Dry hop 2 weeks after primary fermentation slows for 5 days.
Bottle or keg as usual. |
