| Notes: We made a recipe for a DoppelBock. We used munich malt as our base, because that's traiditionally how it is made. We used Caramunich III to add more color to the beer. We didn't want to go over 3% of the caramunich so we decided we would boil the wort for 90 minutes instead of 60 minutes to give it more color that isn't reflected in the SRM readings on our sheet. We chose a good german lager yeast for our beer, pitching a litte extra. We went with Saaz hops because this is not a hoppy beer, and the IBU's it will give us are ideal. Saaz is also very traditional for a doppelbock. Our water additions will give us a pH of 5.48, well within the range. We also are using 1 qt/lb for our mash, to try and get the wort in higher range. |

1 ) Heat 4.36 gal (13.75 L) to 162°F (72°C). Mash temperature of 152-154°F. Total Mash vol should = 5gal.
2) Mash with occasional stirring for (1) hour.
3) Take out grain bag, you should have 4 gal of 1.065 wort.
4) Add 7.5g Vic Secret hops and BOIL for 60 minutes (to 10litres). You may need to add some water back.
5) At flame out, add lactose stirring carefully and slowly. Post BOIL vol = 2.75 gal.
6) Add 12.5g Moutere, 12.5g Rakau, and 25g Wai-iti hops and steep for 30 minutes.
7) Chill wort to 68°F and pitch the yeast.

8) After 7 days dry hop with 30g Wai-iti and 30g Wakatau hops.
9) Transfer to secondary fermenter and using a hop bag, dry hop with 30g Wai-iti and 30g Wakatau hops.

- NEIPA yeast (English malty estery strains) = Wyeast 1318 London III, WLP 066 London Fog, Imperial Yeast A38 Juice, and Fermentis S-04 English Ale.
FOR ORANGE FLAVOR:
- Follow CaraCara hazy IPA recipe... Orange zest in boil (last 10min) and then frozen orange slices (-) pith in secondary for 3-4 days. |

| Notes: The Belgian candy sugar and the wlp530 yeast is the kicker here. Without it you have around 5.5% abv. True Belgian Tripel. I lived in Germany for 3.5 years and missed this ale. Chimay is the closest. I just used regular filtered water from a commercial distributor as El Paso’s water is questionable. |

5 gallons went through chiller and added pumpkin spice and a little bit of brown sugar (soaked in vodka). added to the keg. WY1318 yeast
The other 5 gallons had a large late addition/whirlpool of hops (11 oz Glacier) and used Conan yeast. restarted the burner after the first portion went through the chiller and boiled for 5 minutes then whirlpool for 20 minutes. |
