Notes: Add belgian candi syrup before the boil, taking kettle off heat.
Secret Ingredient #1: I chose Belgian Candi 40L in recipe to meet style SRM requirements (it's all my LHBS had). For a second batch I plan to try 80L or Darker and leave out the chocolate malt.
I threw in a small amount of Chocolate Malt for color. You can choose to leave this out to hit the suggested SRM color. It was just a personal preference as I am in a dark winter mood.
Secret Ingredient #2 Yeast: I usually go with dry yeast. they're more affordable for small batch. Liquid Yeast seems to be proper for this style though. Safbrew BE-256 Abbaye was no less expensive than a good liquid yeast but I figured I could use the pack for 2 small batches. (Finished product I would say was pretty close in flavors)
If scaling to a larger batch I would try Wyeast 1214 Belgian Abbey Style Ale, Wyeast 3787 Trappist High Gravity yeast (Westmalle) or Wyeast 1762 Belgian Abbey Style Ale II (Rochefort).
Yeast Temps: Style suggests starting an abbey yeast at 64f up to 68f for 48hrs to minimize fusels. At 1/3 sugar break move it to 74-78f. The yeasts could increase to these temps on its own also. This is something I will attempt by moving out of my basement to warmer rooms at about 1.046 gravity or sooner. Update: I I hit FG in 3 days at 64-68 before I could even attempt warmer temps.
Optional: Because this is a high gravity recipe I made a Yeast starter using 6g of GoFerm and 5g yeast. I have this on hand for Mead making.
Lower steep/mash temp (148) should get you a lower dryer gravity
Take note of higher priming sugar. Style suggests higher volume.
Bottle condition recommendations are longer. Minimum 6 weeks, but better at 2 months.
Other notes:
The wheat is added for mouth feel and head retention.
Maris Otter Pale malt can also be all Pilsner.
Pilsen is in a lot of recipes. I used DME to help with OG.
Any NOBLE HOP could be used: Halltertau, Saaz, Hersbrucker, Styrian Golding, Willamette, East Kent Golding
Other malts to consider Biscuit and Aromatic. |

Notes: Steep grains in 1 gallon of water at 155ºF for 30 minutes. Rinse grains and remove.
Add 1.5 gallons of water plus the liquid and dry malt extracts and bring to a boil.
While boiling, add the hops per the hopping schedule.
Add Irish moss after 45 minutes of boiling.
Cool the wort to 75ºF. Add enough cold water to cooled wort in primary fermenter to make five gallons.
Add liquid yeast and shake vigorously to aerate.
Ferment in primary for 5 days, then move to secondary for 8 days. Dry hop by adding 3 oz. Summer hops to secondary for 7 days.
Prime, bottle and condition in bottle for at least two weeks. |

Notes: Added cocoa powder with last hops, strained out. Soaked peppers in 1c vodka and added after fermentation was over, let sit for another week or two. Flavor was meh.
Puree habaneros in blender, add after fermentation is complete. New grains should have enough chocolate flavor, but if not maybe steep some cocoa powder in secondary for a while?

Notes: Big juicy IPA. Keep the base beer and play with the dry hops for different versions. This is about a 95% (with the citra/mosaic dry hop) clone of Station 26's Juicy Banger.
Versions 1-3: bounced between too bitter, too malty, and too boring...
Version 4: almost there, needs more bitterness
Version 5: dialed in bitterness, flavor, and dry-hops [apollo] (centennial) {citra/mosaic}
Version 6: tried Simcoe/Azacca/CTZ in the dry hop (too bitter!)
Version 7: repeat #5, bumped up DH to 12g/L
Version 8: IPL (see other recipe) with Blanc and Galaxy
Version 9: Resilience (see other recipe) - 95% pils, 5% c60, all Centennial
Version 10: 80% pils, 20% Munich (66% efficiency)
Version 11: 10% Munich, 5% honey malt
Version 2021-11: Apollo (54 IBU), Mosaic/Centennial, Nottingham. Over-bittered but it's early. Changed bitter hops to Nugget. I really fucking hate Apollo.

1. Put 1 gallon of water in your kettle.
2. Put all 6 pounds of DME into the water. Stir frequently to reduce the chance of clumping.
3. Proceed to steep the grains for 25 minutes at 152 degrees.
4. I pour the last two gallons remaining over the grains into the kettle. I typically do room temp water, but you can heat your water up.
5. Bring to a boil. Add 60m hop addition.
6. Add half whirfloc tablet at 15m.
7. Add 5m hop addition.
8. Remove kettle from heat. Let it naturally cool to 180 degrees.
9. Once the wort gets to 180, drop in the flame out hop additions for 25 minutes.
10. Cool and top off with water to 5 gallons. Pitch yeast. Ferment at 66 degrees. |
