Notes: -Add chocolate additions at flameout and stir for a few minutes to dissolve
-Toast coconut in pan at 200 turning often until browned/toasted (30 minutes?). Roll in paper towel to absorb as much oil as possible. Use stainless mesh hopper to add coconut to keg (after kegging) and let sit at room temp for a few days (3-5).

To brew the Pickelhaube Märzen, mash in for a protein rest at 122°F (50°C) for 20 minutes. Pull your first decoction of about 9 quarts (9 L) and boil for 15 minutes. Add back to main mash and equalize at 150°F (66°C). Hold at that temperature for 60 minutes. Apply heat or boiling water to mash out at 168°F (76°C) for 10 minutes.
Sparge, boil 90 minutes, and add hops at stated intervals.
Chill and oxygenate when wort temperature falls below 80°F (27°C). Pitch a strong starter of yeast at 48°F (9°C).
Fermentation temperature may be allowed to rise to 50°F (10°C). As fermentation slows, bring to 55°F (13°C) and hold three days for a diacetyl rest.
When the gravity reaches 1.012 (3°P), crash to lager temperatures (35°F or 2°C) and lager the beer for two to three months or until Oktoberfest. |

Notes: Mash at a temperature of 68ºC/155ºF. Mash in and stir for one hour.
Sparge at 75ºC/168ºF,
Bring to the boil and boil for one hour.
Then add the pilgrim.
Reduce to 77ºC/195ºF checking gravity and using cold water to liquor back if necessary. Then add the remaining 100gr hops. Leave to infuse for 30 minutes.
Chill down to 22ºC/70ºF.
Airate cooled wort.
Pitch the yeast and ferment at 22ºC/70ºF.
Add x4 a dry-hop charge (25gr Citra, 25gr Mosaic, 50gr Equinox) at
50% fermented - about 2 days
75% fermented - about 5 days
80 % fermented - about 7 days
and just before cold crashing for at least 24 hours. - about 12 days |

Notes: Threw in the grist at 70 and it dropped to about 65. Tried to warm up the heater and also threw in 2litres of hot water, the water might not have been hot enough (mistake) and it was mashing at 62 for quite some time. Suddenly the thermometer was showing 78 after about 20 minutes and I had to throw in 2 litres more of cold water. Mash was a totaly scandal.
Had calculated 15l of water and the grains to absorb 3l, they actually absorbed about 4. With 4l of more water thrown in I was now at 15 again. Threw in 6 more litres after the mash and started boiling (should have been 7 or 8 now when I think of it. I boiled off 4 litres of water during the boil.
Also maybe 2 litres of trub so ended up with just a bit more than 15 litres. |
