Notes: Husk å røre i mesken litt godt de første minuttene, for å sørge for at all malt er bløtlagt. Rør et par ganger underveis i meskingen. Når dere har mesket i 75 minutter, øk temp i kjelen til 77 grader. Når den når 77 grader, la stå på 77 grader i 10 minutter, for å låse sukkerprofilen i vørteren. Skyll med angitt meskevann, til oppnådd kokevolum. Kjøl ned vørter med kjølespiral, motstrømskjøler e.l. til 10 grader. Sett til gjæring på ca 10 grader til 50% utgjæret, dette skjer etter ca 5 dager. Øk temperaturen til 15 grader ca til utgjæret. Den er normalt utgjæret på ca 14 - 16 dager. Sett så gjæringskaret så kaldt som mulig, mellom 0 - 4 grader i noen dager. Dere kan så tappe over på lagringsmedium. Best resultat får dere ved å tappe på fat og tvangskarbonere øllet med Co2. Gjerne 2 bar i 5 dager, så ned til 1,2 bar lagringstrykk. Om dere skal naturkarbonere (sukker rett i flaske), bruk ca 6-7 gr. sukker pr. liter øl. Good luck!
P.S. Det er MYE gjær til denne øllen, men det MÅ det være om dere skal få godt resultat. Det er over dobbelt så mye gjær i denne, som i en normal type ale. Rehydrer gjær før tilsetning i gjæringskaret (husk ca 10 grader) |
