LET IT FREE COOL DOWN TO YEAST PITCHING TEMP. SET HEATER AT YEAST PITCHING TEMP (SEE ABOVE).
PITCH YEAST STARTER AFTER HITTING WITH 1 MINUTE OF PURE O2.
ONE WEEK AFTER YEAST PITCH TRANSFER TO A 5 GALLON GLASS CARBOY OR NORTHERN BREWER SHITTY CARBOY AND ADD WLP653 OR WLP650.

Notes: -Co-pitch 1L starter of TYB Saison Blend with dregs from Grassroots Arctic Saison and Auval Trifolium. Ferment for 48 hours at 18C, then allow to free rise.
-Rack to secondary onto 6 lbs fresh black currants and 0.5 oz American oak (pre-boiled, and soaked in cabs sauv) after 3 weeks.
-Allow re fermentation and conditioning on fruit/oak for 2-3 months.
-Take a sample gravity reading and taste test. Rack off when wood character is acceptable. Bottle after gravity is stable month to month.

Gravity was quite a bit low after not cold crashing 2L starter, so 1 lb of DME boiled and added. Tilt shows that after primary ferm kicked off it mixed in appropriately.
UPDATE (22-Feb-19):

Added remainder of CBC-1 packet (maybe 2/3 full?) to fermenter. Due to massive blow off during first few days, it looks like a lot of yeast was lost. Fermentation had stalled around 1.030, temp was dropped down to 68F.

Still slowly chugging along, down to around 1.015 now, let it continue to finish before racking to a corny keg and naturally conditioning with sugar.
