Notes: upped the IBU from forty to one hundred IBUs. I have two pale ales and 3 saison on tap wanting a DIPA so turned this into west coast IPA.
Brewed on 12/4/2017. Starting Gravity/Pre-Boil Gravity 1.060, One hour boil all hops added to a 4 inch by 10 inch hop spider. Muslin Sack used at 160 F, 20 min hop stand. Removed hop spider at end of boil.
Kegged on 1/2/2018 Finishing Gravity 1.012. Strong IIPA golden hue is nice color. OG 1.072. 7.88% ABV stronger than I like. Nelson and Southern cross hops nice combo but Nelson a little subdued by southern cross. Nice beer but would drink better as a single IPA IMO. |

once 1 gallon collected, collect 1qt or 2 and pour slowly on grain bed.
Sparse by slowly dumping 1qt back on mash
boil 1 hour add hop as scheduled using a hop bag
measured 1.052 @60f 78% eff
add dry hops to fermenter and let cool overnight to ~70f
when cooled to 70F pitch yeast rack after 3 days
Rack to 5 gallon carboy after fermenting slow for 7 to 10 days
when clear and and no fermentation.
transfer bottling bucket. dissolve 5 oz of corn sugar into 16 oz of water. mix in and bottle
feel free to use 1# crystal 10 if you cant get 1 # Munich for 9 # max grain. adjust as need to hit efficiency
Updated had to add 1/4 gallon at rack so i failed to collect enough at sparge. efficiency suffered to 73% when i account for the 1/4 gallon added to secondary

Notes: A crisp, sparkling and refreshing beer that will satisfy your most hard-earned thirst. Light in color and body, the flavor is punctuated with an assertive clean finish. An extremely drinkable beer and a true American microbrewery favorite!
-Mr.Beer
First pour of the West Coast Pale Ale came out with less carbonation than I hoped due to serving temperature. For a while I thought I was a victim of "Chill Haze" but after referance found out that this is it's proper Hue. Taste wasn't too shabby, I also expected way less. Compared to a Less Citric Blue Moon with a much dryer finish. Not bad for my first Home Brew. |

| Notes: Minnesotans know more about keeping warm than just about anybody in the world. That’s why we patterned our delicious Winter Warmer recipe after a famous locally brewed winter ale. This beer starts big and malty, and finishes with a warming alcohol note. It is hopped with spicy Willamette hops. Don’t forget, a bottle of Winter Warmer makes a great stocking stuffer! |
