** YEAST STARTER **
1. Approximately 24 hours prior to Brewing, make a DME solution (1.58lbs DME with 2.4 litres water).
2. Allow solution to Boil for ~15 minutes.
3. Put into a mason jar or temperature proof glass vessel.
4. Apply Ice Bath until Temperature reaches ~65F.
5. Squeeze 1 packet of WLP500 into DME Solution.
6. Cover with Aluminum Foil + Swirl ~ every 1-2 hour until ready to pitch. Try to maintain yeast between 64-70F.
**Pre-BIAB Instructions**
1. Put Maris malt and flaked Oats into muslin sac or two sacs.
2. Put remaining milled ingredients into one seperate muslin sac.
3. Put hops into muslin sac.
4. Put Cherries into muslin sac.
** MASH or BIAB**
PRE-HEAT STRIKE WATER - 4 gal of 163F water
PRE-HEAT SPARGE - 3 gal of 170F Water then put on a lid.
(conduct Simultaneously)
Water Volume: 7 gallons for 1.5 lb/qt ratio.
1. STRIKE WATER: 163F.
2. Add UK Maris malt and Flaked Oats @ 163F.
3. Allow Temperature to fall to 152F prior to closing lid.
4. Maintain mash temp for 45 minutes.
5. Raise temp to 158F.
6. At 50 minutes into mash, add the rest of the grains.
7. Maintain temp @ 152F for the remaining 25 minutes.
8. Check Mash pH ~60 minutes into Mash.

Notes: 1) New Kegco 6 gallon - Started with 5 gallons of spring water and added minerals. Mash landed at 151 after putting in the bag from a strike temp of 158. The mash then fell to 147 towards then end. Had some issues with the thermometer (digital) so I'll be replacing it with a dial thermometer.
PH - 5.4
2) Boil was uneventful, hopped as planned, immersion chilled to 160 to hopstand. After 30 mins, continued chilling and transferred 3 gallons to my fermenter.
OG - 1.060 - missed by a lot. Maybe just the new equipment, too much starting water, or temp issues. Pretty sure because i started with too much water, so I now I have a better idea of boil off. I lowered my efficiency in the recipe to reflect.
3) Put in temp controlled chamber and stabilized at 67 before aerating for 30 mins and pitching sanitized yeast packet. 48 hours in and fermentation is going strong.
4) Fermentation slowing at 4 days in, added first dry hop charge and pulled a sample. I get lots of awesome fruit flavors and a little bit of alcohol/yeast flavor with should clear up after full attenuation. Really looking forward to this one.
Gravity: 1.010 - lower than expected even with updating to show starting efficiency.
5) Transferred to Keg at 7 days, over 2nd dry-hop, and finished fermentation under pressure at 10psi.
6) At 10 days, I force carbonated at 30 psi for about 12 hours, then lowered to serving pressure for about a week.
7) Overall, the beer is decent but definitely very thin considering the low starting gravity. I also finished very low at 1.008. Another issue I've consistently noticed is that, despite using different hops, my beers all taste really similar. I think this may be yeast temp and I'm getting a lot of the fruity esters overtaking my hops. Next time I'll try a lower ferm temp. |

Heat sparge water to 180 degrees.
Recirculate wort until clear & begin runoff
Collect approximately 7 gal. and bring to a boil.
Add sugar and 1st hop addition and boil for 75 minutes, adding hops according to the hops schedule. (Dry hops will be added to secondary fermenter.)
Cool wort and transfer to primary fermenter.

add lime at kegging/carbonation. (18 grams/1 pack in each keg) - after brewing this several times, 18g of the crystallized lime is HEAVY. It’s drinkable if you love lime. But moving forward, probably only adding 9-10 grams per 5 gallon brew.

I’ve brewed this beer twice, so far. First as a 5 gal, then a 10.
In the first brew, the yeast stalled, I think I under-pitched, so the abv was way low.
In the second, 10 gallon brew, there was clear channeling in the mash tun around the sides, and the OG was lower than expected.
Third time is a charm! - Third brew went very well, no channeling, crystal clear lautering, good mash efficiency (91%). Healthy starter, expect good fermentation.
This third iteration of brew was entered in a brewery competition in Lexington VA - Heliotrope Brewery, and took SECOND place. (Fall 2024).
Made a few updates for annual brew #4, updated 2 row to 6 row malt, added carapils. Also, subbed out some hop varieties. Liberty, for bittering, for obvious reasons, and some Citra at flameout to hope for more depth in the citrus (lime) flavor. Adjusted to try to hit around 4.5% abv, 17.5 IBU. |
