Notes: My mash tun is a 10 gallon size, and this brew has it about 35-40% full. It does very poorly at this volume, so the 2 mash 'infusion' steps that add about 1/2 gallon of boiling water are really just there to help it regulate a good mash temp over the 90 minutes.
It's really intended to be more of a single step mash @152 but these adjustments are just for my equipment.
Recommend bagging the strawberries to minimize the haziness.
All the salts/soda/acids pertain to my water profile.
When I added the strawberries (and they thawed) the gravity went up by about 3pts. My OG was more like 1.055 and 1.008 FG. |

| Notes: I did not hit my target mash temp. I came in low around 148(I was shooting for 154) however it did turn out quite well. Pours with a nice brown head on it and a nice dark black color. Hints of chocolate and oatmeal to the nose. Very good mouthfeel and overall great taste. I may use less chocolate malt next time as I want that oatmeal taste to be more apparent. I bottled half and kegged the other half. |

Notes: Modified version of a Spotted Cow clone recipe. I'm not a big fan of the cream ale style so was looking for something established that I might actually enjoy drinking. Or someone will.

pitch 1600 ml starter at 68 degrees
Mash in the 152 to 154 range for a bit of body. You do not want the beer to thin.
I've made this brew 6 times. Last batch was Mar 6 2014. If you have ever tried this brew from wisconsin, (New Glarus) brewery this recipe comes close to what Spotted Cow is all about. They claim it is a Farmhouse Ale but do not use Saison yeast.
After extensive research this is what I came up with for a recipe.The are secretive about the yeast they use, but the consensus is, it is a Kolsch yeast either Wyeast 2565 or WLP 029 and I think it is 029. My preference is 2565. Wyeast 2565 is my house yeast.
Ferment at 58-60 degrees with Wyeast 2565 or 62-65 with WLP 029
I've had good compliments on this brew from others. I live on the Wisconsin border and they don't sell it in Illinois, for some reason they will not ship it to this state. Will update as needed but for now this recipe is a pretty solid clone.
I made 11 gals (2 batches) in march 2014 I cant keep it in the house fast enough. SWMBO and her friends love it. With the temps soaring in Chicago this is a great brew for summer.From kettle to glass is about 5 weeks so turnover is quick. Good luck if you try it, shouldn't be disappointed.
Made batch 7 (5 gal) on 6-14-14 and used Mt. Hood for flavoring (.5) and aroma (.5) I think the domestic hops are closer to the original flavor. -enjoy-
Made batch #8 2-28-2015 no changes should be ready to drink mid April

Kill the flame, and drop the temp immediately to 140F. Add the 0 min aroma hops and continue chilling.
Pitch and Ferment at 62F for 10 days, raise to 68F for last 4-7 days.
Cold Crash to 44F for 2 days before racking to secondary to knock the yeast down. Rack to secondary and raise to 65F, then dry hop.
First three days: 2oz dry hop
Second three days: 2oz dry hop addition |
