Mash in at 152 °F (67 °C). Hold at 152 °F (67 °C) for 60 minutes. If possible heat mash to 168 °F (76 °C) and hold for 10 minutes for mash out. Sparge with 168 °F (76 °C) water and collect 7.5 gallons (28 L) of wort or collect runoff until Plato drops to 2.0 (1.008 SG) and add water to the 7.5-gallon (28-L) mark. Boil for 60 minutes, adding hops as indicated. Cool to 65–68 °F (18–20 °C) and pitch yeast. Ferment at 65–68 °F (18–20 °C) for 1 week. Transfer to secondary fermenter for 2 weeks. Crash cool at 36 °F (2.2 °C) for 1 to 2 weeks then keg or bottle. Carbonate to 2.3 to 2.5 volumes.

Beta gluc rest at 105F for 20-30 min. Sacch rest at 154F for 60 min. Add the 0 min hops, swirl and cover for 30 minutes. Drop the temp quickly, pitch at 68F, raise to 70F at peak of fermentation, and let sit in primary for a total of 14 days. Cold crash for 2 days to 40F, rack to secondary and then bring back to 70F for dry hopping. 3 day dry hop. Bottle and condition for 21 days at 70F. |

Good things come to those who wait. This smooth and roasty oatmeal milk stout won our 2015 Prototype Challenge at a canter. Roasty coffee and chocolate lead to a decadent, full-bodied richness of near uncharted depths with a velvet mouthfeel from the addition of oatmeal and a touch of wheat. This is complemented at every turn by the Magnum and Sorachi Ace hops, with the latter bringing an intensity of smooth vanilla and dark berry fruit on the long, rewarding finish. There's a lot of speciality malt in the mash. Make sure you take the run off nice and steady – increase the flow too much and pull in the bed at your peril.

Notes: This brew is an iteration of a few ciders using different grain bills (juice to honey ratios) with various yeasts.
Notes:
5lbs = 5 Gal. Apple Juice (if this is your first cider, use organic juice without potassium sorbate; it will kill the yeast and not ferment). Don't think I used maltodextrin here.
The rest of the grain bill is accurate. If a little less kick is needed, try one of the alternates below. I'm using WLP001 this time because of its tolerance for high alcohol, higher fermenting temp and because it finishes sweater (personally I prefer the dryness of the EC-1118 but then it's closer to Cyser territory).
I'm thinking ABV should be close to 10%. Also, because OG will be relatively high I'm using a starter. One could also double pitch with decent results. I've pitched one yeast pack before and still not had any problems.
Basic steps: Boil 2 gal. apple juice and add honey stirring constantly. (Honey is heavy and will sink to the bottom. It burns easily like candi syrup.) Boil juice, honey and sugar together for at least 20 minutes. Combine wort with remaining juice once temps drop to pitching levels.

Notes: The second German Smoked malt (10 oz) is actually Oak-smoked Wheat Malt. This brings the total wheat malt to 50% of the grist, and the total smoked malt to 50%, also (33.3% rauch malt and 16.7% smoked wheat malt).
Bring to 10 min boil after mashing, adding whirlfloc at 10 min. Then cool to 95-100°F, pre-acidify to 4.5 pH using Lactic acid, and then Kettle sour with one Goodbelly shot for 24 hours - pH dropped to 3.2. Then bring to a boil to kill off lacto, and add 60 min hops (any noble will work). Chill, then pitch yeast (Kolsch strain or German Ale would work well). Carbonate high.
