Notes: rinse and soak Medium Toast French Oak cubes (2oz before soak) in Cognac (VS is probably the highest grade you want to go with here, just because of cost) in glass jar or other sealable container during entire primary fermentation step. Cubes may soak up enough cognac to lower level of liquid, add liquid to keep cubes completely submerged even though they will float.
When ready to introduce Cubes/chips to the secondary fermenter before racking your beer gently on top of them, remove them from the brandy and place them in a sanitized bowl. Discard or drink the brandy, up to you.
I'd start with 10 days on the cognac and oak. If you feel comfortable tasting without oxidizing from secondary, try it and see if the cognac and oak are coming through. If they've just started to come through, you can probably bottle/keg. Keep in mind that once you can taste the oak in the beer, even in a lighter beer style, it's easy to go overboard on it if you leave the wood in too long; sometimes it's best to pull the beer when you have the flavors rather than going overboard.
If you're having problems attenuating, do what I do, and add the sugar as a thick simple syrup with the cognac oak in secondary. You'll get a bit of a kreusen, but it shouldn't be so big that you'll need to worry about that extra head space, and the sugar should ferment out quickly.
I normally bottle and cork about 25% of this each batch just to see how the flavors develop over time with the slow oxidation of the cork. |

Misfire! (2014) is an American take on an English bitter. It has a more pronounced hop characteristic from late additions of Cascade and Saaz hops. As the beer warms in the glass, you will notice the flavors open up to a smooth maltiness and a more pronounced aroma.
Misfire! was born out of a mad scientist like obsession with making beer. I saw lonely malt and hops sitting on the shelf begging to be made into delicious beer. Using only left over supplies from earlier batches, I assembled a recipe, a delicious recipe, Misfire! |

Notes: Special Brewing Instructions:
1. At start of boil, put dried lingonberries in the blender and cover with wort from the kettle. Puree, cool, and add the pectic enzyme. Refrigerate for one 1 day. Add this mix to the fermenter on day two of fermentation.
2. After 30 minutes of the boil, remove two cups of wort to a smaller pot. Heat the wort to keep it hot, but do not boil it. Add the yarrow, meadowsweet, and birch syrup. Steep this mix until the end of the boil, then strain it into to the kettle.
3. Add the cranberry concentrate and honey immediately after flame-out (end of boil).
Residue of this gruit was recovered from the grave of the Egtved Girl, and was reproduced as "Kvasir" by Dr. Pat McGovern and Dogfish Head Craft Brewery in 2013. This is what the Danes drank before they were Danes, over two thousand years before they were even Vikings, in a time before Christ or Odin, when they worshiped the sun. Brew it and think of her, a young woman with short blond hair and a braided skirt, who died in ca. 1370 BC.

add lime at kegging/carbonation. (18 grams/1 pack in each keg) - after brewing this several times, 18g of the crystallized lime is HEAVY. It’s drinkable if you love lime. But moving forward, probably only adding 9-10 grams per 5 gallon brew.
mash for 90, boil for 75.
I’ve brewed this beer twice, so far. First as a 5 gal, then a 10.
In the first brew, the yeast stalled, I think I under-pitched, so the abv was way low.
In the second, 10 gallon brew, there was clear channeling in the mash tun around the sides, and the OG was lower than expected.
Third time is a charm! - Third brew went very well, no channeling, crystal clear lautering, good mash efficiency (91%). Healthy starter, expect good fermentation.
This third iteration of brew was entered in a brewery competition in Lexington VA - Heliotrope Brewery, and took SECOND place. (Fall 2024).
Made a few updates for annual brew #4, updated 2 row to 6 row malt, added carapils. Also, subbed out some hop varieties. Liberty, for bittering, for obvious reasons, and some Citra at flameout to hope for more depth in the citrus (lime) flavor. Adjusted to try to hit around 4.5% abv, 17.5 IBU. |
