| Notes: This has got to be an original light beer. Low abv, no other fermentables other than the molasses, final beer has almost no head, fair co2 sparkle with the 1 drop per bottle a noteable malasses flavor, though not overpowering, and the hops flavor and bitterness balances it out pretty well. Would definetly consider this a cooking beer, but it was fun trying to recreate this recipe, and did indeed produce a drinkable brew. You probably would not want to brew this in large quantities or all that often. |

First time put this on a large yeast cake of nottingham from the Bateman's XXXB bitter. It didn't really finish that well so co-pitching S05 and Nottingham for second rep.
Swapping in HBC472 for Magnum bittering and EKG flavouring at 10.
Ran out of HBC472, switching back to Magnum and EKG. |

Notes: Cut up the peppers down the middle then add to secondary 3 per gallon
Add lactose the last 5 minutes of boil
Add Vanilla beans 2 per 5 gallons - Split them down the middle and soak for 2 days in vodka then add the vodka and beans into the secondary. When you siphon out make sure you use a nylon sock (sanitized) so you get no gunk.

| Notes: 1.061 pre-boil gravity measurement was off as the final pre-fermentation gravity reading was 1.052. Mixing issue? 5.2 pH measurement of mash. 1 hour mash. Held 153* F extremely well. Chilled in ice bath. 1 hour to pitching temp. Dry-hopped in primary to limit oxygen exposure and because the yeast is healthy and highly flocculant. |
