Notes: because it has the Vienna I mashed for an hour instead of steeping, this popped the top of my carboys, had to clean the hoses twice and had a 5 inch krausen ring around the top. I let it age in the 36 range in my conditioning kegs for 7 days after a 10 day fermentation, pulled off into a serving keg and taste notes: a very roasted flavor with high alcohol back end, the hops disappeared as expected but balanced the sweetness perfect with this yeast! carbonation can be lowered to keep the bite away, nice smooth sipper on a cold winter night.
I fermented down to 12 so a 7.88 on the alcohol
This is a winner!
notes: use 90 instead of 120 or less 120 for less of a roasted flavor if needed
you will need 2 yeasts for a 5 gallon container so 4 for this batch even with a starter, I made a 2000ml starter over night and put 4 inches of foam on top of each carboy |

Notes: Robust Flanders Red Ale
Hops aged for 1 year at room temperature, second addition wild hops (from Poland)
Got 42L of d = 1.076, right to the point
Corn pregelatinized but not extensively
Mash: 63 20', heating up to 73 20', 40 min at 73, 5 min to the end of this rest Carafa was added, within 10 min it reached 78C
Started fermenting at 14C (yeast cake from previous beer), went up to 19C.
Mash very thick to leave some starches even at the cost of efficiency
after 10 days d = 1.011. Split into two - one secondary and second with bugs. 02.05.2016
secondary: 3-4 months, 20-23C. After 42 days (14.06.2016) add oak cubes 1x1x1cm, middle-toasted, 50g. |

Notes: Mash at 149 for 60 minutes. After 60 min. Raise temp to 168 for mash out. Sparge with 2.8 gallons of 170 degree water. Top up with water (if neeeded) to reach 6 gallons of 1.049 wort.
Boil for 60 minutes adding hops as noted.
NOTE: recipe calls for Cascade with AA of 8.2 - you may need to adjust your amounts to reach the desired AAU!

6.2 AAU @ 45 min
simply .5 oz of hops at 0 min.... (up it to .75 if you are using hops with less than 8.2 AA)
Just 1 oz of dry hop no matter the AA.
Cool wort to 65ish and pitch yeast and ferment at 67 for 4 days. On day 4 add dry hops and let rest for another 3 days.
Once final gravity is reached (approximately 7 days total) bottle or keg and carbonated. |

Misfire! (2014) is an American take on an English bitter. It has a more pronounced hop characteristic from late additions of Cascade and Saaz hops. As the beer warms in the glass, you will notice the flavors open up to a smooth maltiness and a more pronounced aroma.
Misfire! was born out of a mad scientist like obsession with making beer. I saw lonely malt and hops sitting on the shelf begging to be made into delicious beer. Using only left over supplies from earlier batches, I assembled a recipe, a delicious recipe, Misfire! |

Denny Conn's Rye IPA
Hop and Spicy!
This is another recipe created by Denny Conn and made popular around the various internet forums. It is a hoppy, refreshing, West-coast style IPA with the added spicy layer of Rye.
It is quite light in color and has an easy-drinking, medium body. The hops provide a flavorful hop base while not being too biting.
The Beer
This IPA starts with a somewhat standard bill of 2 Row and some 60L Crystal for color and a bit of caramel and sweetness. Interesting, Flaked wheat is added for a bit of texture and, along with CaraPils, helps head retention. What makes this beer somewhat unique is the addition of 3 pounds of Rye. Rye adds a spicy, somewhat crisp, and perhaps peppery flavor to this IPA.
The hop treatment is US West Coast with Columbus and Mt. Hood hops providing the clean, citrus, refreshing bitterness. The First Wort Hopping technique is supposed to impart a smooth aroma/taste addition that is comparable to about a 20 min. addition.
The hopping schedule is finished off with a dry hopping addition of Columbus hops to give this beer a refreshing taste and aroma. |
