Mash water boiled before use to reduce oxygen level. Sodium Meta Bisulfite (Campden tabs) added as powder @ 50 ppm to prevent Hot Side Oxidation (will add 11.6 ppm Na+ and 40.5 ppm SO3- aq to water profile)
Add dry hops into serving keg 5 days before serving. |

Brown Ale:
Make hop tea with 180 degree work with fuggle hops. Cool wort and add half to this fermentor. Pitch Imperial Pub Yeast at 68 degrees and hold it there for 14 days.
Schwarbier:
Make hop tea with 180 degree work with Hallertau Blanc hops. Cool wort and add half of it to that fermentor
Ferment at 50 degrees for 1 week. Slowly raise that up to 60 during the second week and then punch it to 64 for 4 days for the diacetyl rest. On day 16 crash for a month.

Notes: Mash in with 3 Gallons @ 172*F for 60 min rest @ 157*F
Pull 1 gallon of first runnings w/ no mashout and start boiling it.
Finish 1st runnings, and add 5.3 gallons in two separate batch sparges.
Add lactic acid at 0.25 mL/gal mash water
0.75 mL to mash, 1.35 mL to sparge water
After an hour of boiling 1st gallon, add to the full boil, and continue until 60 minutes.
Dilute to ~1.049 SG / 12.15 Brix |
