Notes: Mash PH 5.2 - Mash out 76c for 10mins. Rehydrate 33g of yeast in 2lt at 30c boiled water for 15 to 20mins. Chill to 18.5c into fermenter. Ferment 5 days then rack to 2nd. Leave for 2 weeks then keg/bottle. Leave in bottle 1 month then enjoy. Carb around 2.0
looks fantastic in kettle black with a nice esspreso, caramal, raison smell.

Notes: added 2 White Labs of Lacto Brevis WLP672 at primary. Added Us-05 second day of primary. Fermented at 80-85 degrees for 11 days. Cold crashed for 3 days. Racked to bottling bucket. Bottles and used carb tabs. Took one gallon and siphoned it and added Jim Beam Devils Cut 90 proof Whiskey soaked oak chips and added .5 cup of tart cherry juice to 1 gallon fermenter. |

Their oxygen and spaced out nutriuent regimen were a big help and even though it was my first big stout I had no fermentation problems
"You should also consider oxygenating twice, once at pitch, and once 12 hours later, to ensure the yeast has all it needs during its reproductive phase. You can charge your beer up to 8ppm of oxygen using an air pump oxygenation kit. In addition, you should look to add extra yeast nutrient to the beer. Adopting a staggered nutrient addition regiment, similar to that used by mead makers to ensure healthy and complete fermentations in high stress scenarios. Instead of adding the entire dose of nutrients when you pitch your yeast, simply add 1/3 of a full dose at pitch, another 1/3 after the lag phase has ended, and a final 1/3 a day later." |
