Notes: Can use different hops for hopstand and dryhop. Experiment by making 10gal and try different hops in 4-2 1/2 gal batches.
Brewed 5 gallons. Split into 2.5 gallon batches. First one transferred to Fermzilla and cold crashed with 3 oz of hops. Should be half that much! Will check after 24 hours.

Notes: about the grain bill, I used Crisp malts Maris Otter extra pale malt not ‘finest’ and the OG was 1.045 not 1.049
oxidation was a little issue cause of my setup, I'm using a brew bucket, siphoning into my klastein mashtun with the priming sugar and then bottling with a cane. I'll try adding a little sodium metabisulfate to help drive out some of that oxygen next time. |

Notes: Going for a basic (Lime) margarita flavor profile.
After mashing, raise temp to boiling for a few minutes, and then chill to around 100°. Use 88% Lactic Acid to pre-sour down to pH ~4.5, before pitching a lacto strain to kettle sour. I prefer a Goodbelly shot for Lacto Plantarum, or OYL-605. Hold temp (if you can) for around 24 hrs, or until pH ~3.3-3.5.
Bring to a boil for 10 min, adding hops, salt, and coriander (can use less or no hops, or other varieties). Chill and pitch clean yeast (Chico, Kölsch, German Ale, etc). While fermenting (~2 weeks), zest 4 small limes and add to 1/2 cup tequila. Separately, also add 2 toasted oak cubes to 1/4 cup tequila. When kegging/bottling, add tincture liquids (discard zest and cubes) to taste.
My efficiency was lower than planned, so I added wheat DME to raise the OG. Ideally shoot for all grain (though I’ve made award winning Goses with all DME, so don’t worry about it if you have to add some!)... |

Notes: 1. Fill brew pot with 4 gallons water.
2. Stir in water agents and bring water temp to 155 degrees.
3. Add steeping Carapils, Crystal, and Honey malt grains to bags and steep for 30 minutes.
4. Remove bags containing steeping grains from wort and let drain naturally - do not squeeze bags.
5. Add DME and additional water to bring amount in boil pot to 7.5 gals. Bring to boil.
6. Add Chinook hops after 30 minutes of boil.
7. After 45 minutes of boil, add lemon juice, lemon rinds, and 32 oz chopped ginger root.
8. After 65 minutes of boil, remove lemon rinds, add molasses, honey, Hibiscus flower syrup, maltodextrin, lemon zest, remaining chopped ginger root, yeast nutrients, and 1st addition of Amarillo hops.
9. After 70 minutes of boil, add whirl floc tablet.
10. After 75 minutes, turn off heat. Using distilled water, top up wort to 7-7.5 gallons and add 2nd addition of Amarillo hops for 15 minute hopstand.
11. Cool wort to 65-70 degrees, transfer to primary fermentor, pitch yeast, aerate.
12. After 7-10 days of fermentation, transfer to Corney keg.
Found the origins of this recipe on the internet 20+ years ago. Continue to adjust recipe from time to time. Recipe began with 48 oz of chopped fresh ginger root; pared it down to 40 oz (amount can certainly be adjusted to fit taste). Replaced cane sugar in original recipe with molasses. Lemons, molasses, and honey add subtle aromas and taste. Hibiscus flower syrup provides subtle flavor and some red color addition. Whether or not you like the taste of the end product, the brewing aromas are worth the effort! Has all the attributes of Ginger Rogers: a charmer with a taste for drama, flair, and adventure; a romantic with a killer sense of style. And no matter with whom she danced, she always did it backwards and in heels!

Notes: After mashing, wrapped the carboy in a heat belt, pitched one small plastic container of GoodBelly probiotic shot (unflavored) and let sit for 3 days. Following this we racked to a pot and then brought to a boil on the kitchen stove. VERY strong apple smells, almost of strong cider, which is a product of acetaldehyde. reracked to Carboy and pitched Brett/Sacc strain.
2.5 weeks into fermentation, I dry hopped with 1oz of Lemon Drop Hops and let sit for 3 days prior to bottling.
Came out GREAT, however for the next brew I will use Pilsner malt instead of 2-row and I will also add wheat, per this is the standard recipe.
Beer had a very funky smell but tasted so smooth.
Efficiency came out very good but exceeded target ABV range slightly. Not a huge deal, can probably adjust by lower amount of grains. Although 6.66lbs of grains is why the beer is named as such. |
