Notes: Add grain to 14 gallons water at 164°F for a target mash of 154°F. Hold mash temp for 90 minutes. Recirculate mash until wort is free from large amounts of grain. Drain off wort into boil kettle for approximately 11 gallons (sparge as needed for a boil gravity of 1.075). Boil for 240 minutes, adding hops at 60 minutes (IMPORTANT: please be aware of your boil-off rate, as you should finish your boil with 5.5 gallons and aim to get 5 gallons into your fermenter). Pitch yeast at 90-95°F (a 1L starter is highly recommended). |

Notes: Double crush grains, add to bag. Strike water temperature of 156/152 for 60 minutes. Increased temperature to 170 for 10 minutes. Drained and squeezed bag. Boil as normal for 60 minutes. Cool it to 55 as quickly as possible. Aeration of wort by splashing into a bucket and then into primary fermentor.
Primary fermentation until it is very quiet. Then transfer to secondary and set the temperature to 35 degrees. Lager it for 4 weeks, then bottle as normal using 2/3 cup of corn sugar in 16 ounces of boiled water.
Condition bottles at room temperature for 2 weeks. |

Notes: Made a lacto starter with lacto d. for about 2.5 days before pitching. kept it around 90-100. Going to try souring in kegs this time instead of a kettle. Rack 3.5 gallons into each keg after 15 minutes of boiling, lower the pH to under 4.5 using lactic acid, and split the lacto starter between them. Hold at 100 for 24 hours then rack back into the kettle to finish the 45 minute boil. |
