Notes: I posted a picture of the real Zombie Dust for reference only if you are looking to brew a batch of this magnificent beer. Had the good fortune of drinking my fill of Zombie Dust on draft during a recent visit to Fatheads brewery and tap house at which time they were also serving a collaboration brew between 3 Floyds and Fatheads. |

Notes: This was a crazy-tasty beer. Simple and quick for the beginner but a truly delicious beer. I found that my friends and family all loved it from the beer-snobs to the light beer drinkers. A real crowd pleaser!
Basic Guidelines:
Steep the crushed grains in 1.5 gallons of 160°F water for 30 minutes. Remove and sparge into the boil kettle. With the heat off, add all extracts and sugars to the kettle and stir to dissolve completely. Carefully bring to a boil, stirring to avoid scorching and watching for boil-overs. Once a rolling boil has been achieved, add hops according to the schedule and any other additives when listed. After the boil is complete, remove from heat and begin to cool; an ice bath or a wort chiller help to bring the temperature down quickly. When the wort is cool, add it to a clean and sanitized fermentor. Add water until the volume is 5 gallons if necessary. Once the wort has dropped to below 80°F, aerate well (don't forget to take a hydrometer reading) and pitch the yeast. (also consider Wyeast 1056 American Ale, 1450 Denny's Favorite Ale Yeast or Dry Fermentis Safale US 05) ***Add 1 oz Dry Hop Mosaic*** Attach a blow-off tube and ferment at desired temperature for the yeast strain. Rack to a secondary fermentor when krausen has receded and beer begins to clear. After fermentation and conditioning are complete, bottle or keg your beer. Allow to condition again and enjoy!

Had an issue with the digital controls on the boil - set us back about an hour.
wlp 300 was unavailable and purveyor substituted wlp 380
we decided to underpitch the 380 and ferment on the warmer side in order to increase the isoamyl acetate esters per the experience below:
GOOD ALTERNATIVE"
By: HopfenUndMalz | Date: Jul 5, 2014 | Beer(s) Brewed: Weißbier hell
Bought this cause my local store was out of WLP300 strain. But as I wanted the 300's banana flavour I used one vial for 40 liters. No starter, no aeration, 25 °C...BOOOOM banana all over the place. In my mind even more than you get with WLP300. On the other hand attenuation went down but that's a price I'm willing to pay. Aroma is less fruity and more spicy. Besides banana there's also hinds of clove and citrus in the flavour (might be the Saphir hops though) plus a very nice acidity.

Notes: Brewed 02/16/19.
Mashed in at 155 f for roughly 60 minutes with a batch sparge at 170 f for 15 minutes. Boiled for about 45 minutes just to lower volume and raise abv and then started hop additions.
Cooled to 65 f and pitched yeast. Fermented at 62 f. Very active fermentation after 12 hours. Dry hopped 3 days in when high Krausen started to fade. Let sit for a few more days then raised temp to 66 f on day 7 and did second dry hop addition. Main Fermentation had stopped at this point and FG had pretty much been reached at this point. Let sit in carboy for about 4 more days and then decided to keg. Primary fermentation for roughly 2 weeks then straight to keg. FG was 1.014 and ended up lower then expected.
Upon kegging slight hop bite was apparent and flavor/aroma was lacking. Tasted slightly.. flavorless?
After waiting a couple more days in keg this beer developed and rounded out as a whole. Completely different beer then when first kegged. Very hazy and juicy. Very sessionable beer and could crush a bunch of these back. Sitting at 5.6 percent. I would definitely brew this again and for sure loved the idea of a single hop ipa idea to really capture the hop flavors from just one hop. This is a great hop with flavors and aromas of pear mango pineapple and stone fruit.
The only change I would make to this beer is I would raise the fermentation temp up slightly to really boost the fruity flavor of this beer, but that could just be me trying to change something that is already great. besides that small change it has turned out excellent. |
