Notes: Mill the grains and dough-in targeting a mash of around 1.5 quarts of water to 1 pound of grain (a liquor-to-grist ratio of about 3:1 by weight) and a temperature of 149 °F (65 °C). Hold at 149 °F (65 °C) until enzymatic conversion is complete. Raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (24.6 L) and the gravity is 1.037 (9.3 °P).
The total wort boil time is 90 minutes, which helps reduce DMS levels in the beer. Add the bittering hops with 60 minutes remaining in the boil. Add Irish moss or other kettle finings with 15 minutes left in the boil. Chill the wort rapidly to 60 °F (16 °C), let the break material settle, rack to the fermenter and aerate thoroughly.
Use 2.5 liquid yeast packages or make a starter with fewer packages. Ferment at 60 °F (16 °C). Lager for at least four weeks before bottling or serving. When finished, carbonate the beer to approximately 2.5 volumes and serve at 50 °F (10 °C). |

Notes: All grains and pumpkin go in the mash. If the pumpkin is in the boil you will most likely lose a gallon of water, and have a tough time straining the pumpkin out.
If you really want to put the pumpkin into the boil then you should use a grain bag or filter the wort before racking to your primary.
The pumpkin should be cleaned and cut into small cubes and baked for 45 mins at 350, then mashed and coated with honey. Then baked for another 45 mins at 350. Let it cool to 154 and add to mash. ( I used can un spiced pumpkin in all steps )
Secondary - 10-3-14 added 2 oz vanilla extract, 1 cinnamon stick, 16oz pumpkin flesh, 1/2 teaspoon graham cracker extract and 1/2 tsp pumpkin pie spice. Will sample in a week.
Btw- tasted really good
For the vanilla bean vodka solution, two vanilla beans are cut in half. The seeds and goodies are then scraped into 4oz of vodka. Let the vodka sit for two weeks.
Notes from Hans: Instead of using canned pumpkin, I cut an actual pumpkin up in cubes and cover it with cinnamon and honey and then smoke it in the Traeger. There's two pumpkin additions, and I do this each time. This is one of my favorite beers, and I would drink it year round if it was on tap. If you want to make this BEFORE pumpkins are being harvested, you can use sweet potatoes. I've tried it, 99% of the flavor comes from the spices and such, and the texture of sweet potatoes (or yams are even better since they are orange in color) are very similar. They contribute the same sugars from what I can tell.
Oh, also.. you can use turbinado (sugar in the raw) or brown sugar. A mix of each is suggested, but if you don't have one or the other it's a very small difference at the end. Just use 1 pound of brown sugar or 1 pound of turbinado. It's going to be a great beer either way. |

Notes: For this beer, all brewing steps are your typical mash & boil.
Fermentation temperature:
Pitch yeast (w/ starter or 2 packets) @ 48 - 53 F
50-55 F : 5-8 days (until 50% Attenuation)
- At 50% attenuation, start ramping the temperature up 5F every 12 hours until reaching 65-68F
- Let beer sit between 65-68 F until fermentation is complete (anywhere between 4-10 days)
Once FG is stable and no diacetyl or acetaldehyde is detected in the beer, begin ramping the temperature down in 5-8 F increments every 12 hours or so until it reaches 30-32 F. Let beer sit between 30-32 F for 3-5 days.
Alternatively Option: add gelatin once the temp has reached 50F (10C) and you may be able to keg in 24-48 hours after adding the gelatin.
at this point, you should either keg or bottle the beer.
If kegging, then place keg in keezer/ kegerator on gas and let sit for at least 3 days before enjoying. many find great results between the 5-14 day range, but that is up to your preference. Cheers! |

Notes: Step 1:Mix honey in 4.2 gallons of water no hotter then 104f use spring water, mix until fully mixed.
Step 2: Measure starting gravity.
Step 3: Can start a yeast starter or use yeast dry on top of must.
Step 4: USE TOSNA protocol "if you don't know this you don't need to be making mead."
Step 5: Degas one time a day until 5 to 7 days in or last sugar break,
Step 6: ferment until 1.000 and rack to secondary.
Step 7: add 2.68 grams of Potassium Sorbate and 2.5 grams of potassium metabisulfite
Step 8: back sweeten with half a pound of honey and 1 pound of lactose.
Step 9: add 2 cans of orange juice concentrate, and the zest of 5 oranges. Also add 5 vanilla beans scraped out, place zest and beans in hop bag.
Step 10: tasted and add more honey as needed. Let age another week and make acid and other flavor adjustments as needed.
Note: this is intended to be carbonated at 2.5 volumes.

Notes: Pressure cooked 1oz Hallertau hops in 8 c water in Instant Pot pressure cooker 25 min, then added all to boil kettle. Boiled for around 50 min and S.G. pre-boil was 1047 and post boil was 1.057 Diluted to 1.052 with R.O. water. Pitched yeast that had started earlier. 12.90 Brix @70F adjusted for temp. converts to 1.0522 S.G.
More like 4.5 gallons pre-boil and 4 gal in the fermenter
Added a small portion of yeast slurry/starter today of (S-189, S-23, and Voss Kviek) since there was no activity as Monday at noon.

| Notes: Following Briess's recommended dough in and sparging regiment. 10 quarts to mash in with and 22 quarts to sparge with, only collect the first 6 gallons. But in my system I will collect closer to 7.5 gallons to get my desired volume. I also will add 10% more grain for a final boil volume of 5.5 gallons. |
