Tasting notes:
- Relative to the commercial product, this batch was slight darker; guess the commercial is closer to 2-3 SRM
- Relative to the commercial product, this batch had more vanilla
Notes for brewing again:
- Reduce vanilla extract to 3 oz per 5 gallon
- Reduce 2-row to 15 lbs
- Reduce Crystal 10L to 1 lb
- Reduce lactose sugar to 1 lb
- Change CaCl selection to dihydrate and recalculate
- Consider use of a cleaner yeast such as US-05
- Consider removing aroma hops or moving back to 30min |

Notes: likely a reasonably large overpitch from using about a cup and a half of slurry, but the slurry wasn't super fresh
forgot gypsum and mash water was low by about 2.25 gallons, maybe due to boiloff or mismeasuring, but it resulted in a mash temp of 150 instead of 156. I added a carafe of boiling water to get it up to 152 after 10 minutes, then sparged another 2.5 gallons of room temp water to get the normal volume.
Fermented sans fridge in old-school style because I didn't rebuild the temp controller in time. Low 70s to start until stabilizing at ~69. Put into the fridge on day 2.5 and already at 1.014. |
