Strike: 15 litres at 71°C hit 66°C mash temp.
60 minute mash. Stir every 15 minutes. ph corrected with acid. Overshot slightly (only 2ml of acid used). Corrected back with chalk to 5.2 ish (only using strips).
1st runoff 10 litres (predicted 9.6 litres)
15 minutes batch sparge with water filled to brim of tun. Hit 75°C sparge temp (wanted a bit higher).
2nd runoff stuck at 5 litres. Include some oat husks next time. Stirred and left to stand for 5 mins then lautered and started run-off again.
Ended with 23 litres at target boil gravity of 1.039. Predicted 25 litres.

Mash in at a higher temperature to leave more unfermentable sugars in the wort. This gives the beer a sweeter porter profile.
Astringency
Beers containing more dark grains are more likely to have some astringency in them. This is because darkly-roasted malts give up their tannins a bit easier in the mash. In a dark beer like a porter, adding less dark malt really isn’t an option. So, it pays to keep two things in mind. First, if you don’t oversparge, you probably won’t get an excessive amount of astringency, even in the darkest porter. Monitor your final runnings and don’t let them drop below SG 1.010 (or rise above a pH of 5.8, if you have a pH meter). Also, you can cool down and taste little samples of your runnings as you direct them to your kettle. Once the runnings start to have a puckering, drying sensation to them, stop collecting wort.
Mashing and Steeping
For all-grain brewers, a single infusion mash is all that is required for a porter. For a “rounder,” full-bodied brew, mash between 152 °F (67 °C) and 156 °F (69 °C). Mash out to 168 °F (76 °C) when the mash is done to (mostly) stop enzymatic activity. In addition, there’s absolutely no reason to extend your mash beyond the point in which an iodine test shows that all the starches are converted. |

Notes: Triple decoction mash (easier to explain here)
First rest at 35 degrees C - 15 minutes
40% of tjhick mash into a pot and bring up temp to 68 degrees C rest 5 minutes
Put heat on max for 20 minutes and bring up to temp
Add back to mash tun slowly until it reaches 50 degrees C and then wait 15 minutes
Remove 40% of the thick mash and bring up to 68 degrees C rest 5 minutes.
Put heat on max for 20 minutes and stire like a madman,
Return back to mash tun until it reaches 68 degrees wait 15 minutes
Remove 25% of the liquid mash, and bring it to a boil for 20 minutes
Add liquid mash back to mash tun for mash out
Lauter for 45 minutes
Sparge to total volume of 30L
120 minute boil and do the harshest boil you possibly can. Caramelize those sugars! You will probably lose differing amounts to evaporation, but I lost about 6L

| Notes: Pretty good.. Stone fruit heavy, good mouthfeel. Consider adding a bit more pale chocolate to up the coffee/chocolate flavor a bit. .25 pale chocolate used. Recipe also used 1/2 golden promise 1/2 2 row rather than marris otter. Next time consider using 1/3 golden promise 2/3 marris otter for more bready backbone. Also add 1 more oz of black patent.
