Notes: -Mash as normal with grain bill listed.
-After sparge bring to boil to kill microbes.
-Make sure pH is at 4.5 with lactic acid.
-Once pH is hit and wort is cooled, pitch omega lacto strain.
-Keep in kettle at 95 degrees for 24-48 hours until desired 3.2- 3.4pH.
-Bring to boil again to kill off lacto strain.
-During boil yeast nutrient and hops.
-Transfer to fermenter and pitch sacco strain at pitch temp.
-After fermentation is done throw in potassium phosphate.
-After potassium phosphate is added, add desired pureed fruit. |

| Notes: Juicy, hazy, full mouthfeel, thick creamy head, and definitely tropical. Mine came out around 1.008 and about 6.5% abv. Not hoppy or juicy enough to be a new england, and I'd like to keep it that way. Only fermented for 12 days, as the OYL-200 made quick work out of all the sugar in 2 days. Kegged on a Tuesday and gone by that Friday. One of my new favorites. |

Notes: The name on this recipe is because the first time I brewed it I burned my foot with some brewing water that got sloshed during transfer for sparging -- this led to the name and the purchase of pumps and hoses for my brewing system.
This is a very drinkable classic version of the dunkelweizen style. It is a popular choice when served at parties.

Notes: 1/4 cup of London Ale III slurry (no starter), plus US-5 sprinkled on wort.
3 Gallon RO Water to Kettle. Steep grains as it comes to a boil (remove grains at 170F) and add 6 lbs Pilsen Extract and Bring to a Boil - Watch for Boil Overs
Boil 30 minutes, adding the late addition of 3.15 lbs of MO Extract in last 5 minutes (off heat, thoroughly mix before returning to heat)
After boil, add 1 oz Simcoe and Hot Hopstand for 30 minutes (covered), then cool in Ice Bath until 100F
2-3 Gallon top off at 32-36F Purified Water.
Pitch at 68F or lower. 5.5 gallon total in fermentor.
Forgot to take an original gravity reading. After 1 week, krausen began to fall and gravity was hovering just above 1.010. Dry hopped, and dropped temperature to 62F. Gravity sample tasted amazing.
