Notes: All grains and pumpkin go in the mash. If the pumpkin is in the boil you will most likely lose a gallon of water, and have a tough time straining the pumpkin out.
If you really want to put the pumpkin into the boil then you should use a grain bag or filter the wort before racking to your primary.
The pumpkin should be cleaned and cut into small cubes and baked for 45 mins at 350, then mashed and coated with honey. Then baked for another 45 mins at 350. Let it cool to 154 and add to mash.
For the vanilla bean vodka solution, two vanilla beans are cut in half. The seeds and goodies are then scraped into 4oz of vodka. Let the vodka sit for two weeks. |

| Notes: Vorlauf carefully to enhance preboil wort clarity. Keep hops in muslin bags. Remove bittering hops at 60 mins. Add late copper hops at flameout in two bags and let stand between 95-100 C for 5 mins, then start cooling the wort with chiller at max rate. Remove hops after 5 mins of active cooling. At ~room temperature, remove chiller and put kettle in fridge (closed lid) for about 60 mins so that all major break particles have enough time to settle at the bottom. Carefully rack from top to carboy leaving break material in kettle. Pitch 150ml/l Fuller's yeast starter (unstirred) @17.5°C, aerate by shaking and let temperature rise to 20.5°C over the course of fermentation that should take between 3-5 days. When fermentation has slowed down considerably but is not quite finished yet (SG ~1.016), you should rack to secondary carboy, leaving about 150 mls of head space. At this stage you can add initial dry hops, too. The ongoing fermentation & co2 release will cause some krausen on top, but it will also purge the headspace and eat the oxygen intoduced at wort transfer stage. Put an airlock on top. When fermentation stops completely (~2 more days at 20.5°C) you can start cooling down the wort in a fridge. When you have reached ~0-5°C, add some isinglass solution and fresh dry hops, filling the carboy neck all the way to the airlock, thus minimizing the air volume. When the beer drops clear, bottle it straight from secondary FV. Add 2 grams of corn sugar in boiled solution per 33cl bottle or 3 grams of sugar per 50cl bottle. Add 2-3 drops of fresh yeast slurry from a fresh starter per bottle to kickstart healthy bottle conditioning phase and ensure rapid oxygen uptake by yeast. |

| Notes: Brewed 12/26/16. Strike water was about 172F and I hit about 153F. Recirculated about 1gal which stabilized it at 152F. The first gallon of first runnings were collected and boiled down to about 1.5 pints and added in at about 15min. In kettle efficiency was 73% which is a bit low. I tried to mash with more water to increase, sparge slowly, and sparged more due to the 1gal concentration. Not sure why I didn't get better, however, it was spot on with the brewhouse estimated efficiency. Boil off was just about spot (e.g. future brews with lots of hops and 90min boil use this boil amount) on with the collected volume in the carboy and cooling took about 40ish min. Pitching temp stabilized at about 64F. 12/27 brew sitting at about 65/66F so I cooled it. By evening it was sitting about 65/66F so I cooled it again. 12/28 brew was sitting at about 62F in the morning and 64F by evening. 12/30/16 I threw an aquarium heater in the brew and it's sitting at about 70F. 2/9/17 dry hopped, biofined, and took gravity reading. Kegged on 2/13/17 and botteled via natural method on 2/15/17 with about 2.1 volumes of C02. Won second in BAM World Cup of Beer 2017 and Won First in the same comp with the same batch in 2018. |

5ml of hop extract replaces 1oz of a 10% AA hop. (10AA). Or 1ml of hop extract = 2AAU
Add the corn sugar in the last couple of minutes of the boil and mix well to ensure it is completely dissolved.
After flame out begin to whirlpool for 10 - 20 minutes. Cool temperature to 150-140 and hop stand for 10 min.
Dry Hop #1 starts 7 days post brew day
Dry Hop #2 starts 11 days post brew day
Dry Hop #3 starts 15 days post brew day
Dry Hop #4 starts 19 days post brew day
Cold crash for 24 to 48 hours, four days after Dry Hop #4. Dissolve one tsp of gelatin in 1/2 a cup of water by microwaving until the solution reaches 150F. Check every 15 sec and try not go over 150F. Add the hot gelatin solution to the beer and let it sit for 24 to 48 hours in fridge. |

2. mash at 154 -- strike with 43 quarts of 167F, at 78 degress ambient.
major problems with hop rocket. Had to remove it from the circuit and dump the hops into the kettle. Beer stood hot in the kettle for approximately 45 min before ran off in to fermentor, Fermentor in to chamber overnight to stabilize at 67 degrees.
3. Using dry yeast and changed the recipe to include acid malt. Added 1ml LA to mash to achieve Ph- 5.1, Vorlafing started at 30min in to Sacc Rest.
88% BH effeciency, ran off for only 30 min!!!
4. For the Brett Version we are using Wlp648
The brett was at 1.023 at transfer to secondary.
went 1.5oz each on all dry hops.
