Notes: 1.2 Liter Yeast Starter - 4.8 oz DME
Add 1/2 Tsp Yeast Nutrient to starter wort.
MASH:
Add all grains (but acidulated malt) in Mash Tun in 6 Gal for Pherulic Acid Rest.
Heat mash to 111 F for 20 min.
Add Acidulated Malt for the 2nd step
Raise mash temp. to 152 F and hold for 60 min.
Check Conversion with Iodine
Sparge (170'F) - 5 gal.
Fermented @ 70 F for 10 - 12 Days
Prime 8.5 gallons wort with 4.7 oz of corn sugar

Notes: Going through the Brew-Master's Bible by Stephen Snyder, and the some what of a Anchor Steam caught my eye. After starting to fill out the recipe I realized it was an extract recipe with few descriptions on what specialty malts are used... So, this is my best stab at it. Either way this will be a fun brew and first attempt at a steam beer.
I customized the attenuation too, going up by 7.5 points to match the style. We'll see if that is a huge mistake. |

Notes: Substituted dark crystal 80L for crystal 225 EBC
Ended up using 26L of water.
Heat up 20L of strike at 100C, transferred 5L to second bucket, then added 5L of cold water to strike, ended up at 70. Mashed for an hour, added 1L of water 30mn in and maintained 64C. Second sparge was at 55C.
OG finished at 1.072
FG at 1.024
Grain was not fine enough, will try this again soon.

Notes: Added first hop addition @ flameout, 2-3 minute hot steep, 5 minutes to cool to 165F, added second hop addition at 165F, let steep for 20-30 minutes. Cooled to 70F.
Strained hops through strainer. Pitched rehydrated yeast. Let ferment at 66F for 3 days, moved to 72F to finish. Added dry hop addition after 90 hours.
