Notes: Suggested Mash Temperature:
A low mash temperature is recommended to create a light, dry easy drinking beer. Mash temperature of 147° - 149°F.
Fermentation Schedule:
Primary fermentation of two weeks at 66° - 74°F, and
a secondary fermentation for 1 to 2 weeks. You can add the tart cherry concentrate to the primary after fermentation is complete, or add to the secondary. You may notice some renewed fermentation. Wait one to two weeks and make sure fermentation is complete before bottling or kegging.
BREWER’S NOTES:
This is a pretty straightforward American wheat beer recipe. The base is part 2-row barley and American white wheat, with just a
little bit of aromatic malt for character, and a single hop addition for bittering.
This is a great beer to enjoy in the late summer and fall!

Notes: add 1 Servomyces tablet for yeast
trying low alcohol beer, added more % more roast barley etc. to get a bit more bite with the reduced alcohol.
Using a mash thickness of 2qt/lb which is quite thin. There is danger of extracting tannins on the fly sparge. Watch the SG on the last runnings and stop when SG is less than 1.008. Add hot liquor to BK if necessary to get to 22.5 gals. Ensure sparge and mash are pH 5.4

Notes: 12/8/17- blended the two batches together as there was slightly different characters on both after they were blended with the last beer from the barrel and not my regular funky/spon/house strain. One was about 1.004 and the other closer to 1.010. I added 4 ounces of Tettnanger to one and 4 ounces of golding's to the other to see which character I liked best. Hopefully it will be ready to bottle in another month. |
